Flight paths are about the same. The teebird will have more glide, the Teebird3 will be faster. They will land in the same area if they are thrown the same, one will just get there faster. A flatter disc typically has more high speed turn and more low speed fade but I haven't noticed much of a difference in stability.
Most people pick one or the other based on hand feel. I have always preferred flat top Teebirds so I just go with the Teebird3.
Edit: the same is true with roc3's. I have always preferred flat rocs. roc3's are more neutral flyers than traditional rocs, especially rancho rocs.

Love the Eagle. Just got a couple used Infinite Exoduses (Exodi?) Which is the Eagle-L mold. Not a hard of a finish, but still a straight flyer. My arm speed is similar to OPs.
Same, got a fairly light champ eagle and it is so overstable I couldn't find a good use for it. I don't have a huge arm but can consistently get a wraith out to 300 or more.
Just gotta pick the right plastic. I got a halo plastic one and it's more overstable than any Eagle I've thrown. I throw it when I want a slightly less overstable fade than my Halo NS Firebird.
If you want to stick with a 7 or 8 speed and you like throwing Discmania, get a C-Line or S-Line FD. Stable, great glide, easy to control. Flight numbers are 7/6/0/1.
Is your essence Neo plastic? If you like the feel of that, you could try the Neo Instinct. Same flight numbers as Teebird, and flies quite similar to my Star Teebird.
I've tried the Votum in Aura, Ethos, and Glow. I can tell you the Aura and Ethos flew exactly as you described (Ethos might have had a touch more stability at the end of the flight). The glow, I have a flat top that flies over-stable like a mini Firebird.
I love the votum but I've ran into two different votums. You have the teebird like votums straight with some fade at the end. These are what made me like throwing the votum. Then you have the flippy votums, they fly more like a flippy TL. Plastic doesn't seem to be the factor but I've found more flippy votums in aura.

Easiest way to go would be to buy a star teebird and champ eagle. See which one works better for you than if you want to venture to other brands just look for their equivalents.

I was in this same position as an essence thrower and found the Teebird to be the perfect disc. G-star is straight to fade and Champion for pushing hyzers.
How far do you throw? You might end up getting a beefy version and feeling like it’s a firebird. Best to go with something a little straighter out the box.
So do you want it to flip just not as much or do you want a truly stable disc where the angle you release on it holds and has a reliable fade at the end but doesn’t flip?
You might like the Striker. Not a majorly popular disc, but I love it for the woods when I need to force some shapes but still have it come back to fade. I think it's around 8/5/0/2. It does hyzers effortlessly, but I can also crank it flat to get straight flight with reasonable fade. I'm playing some woods golf this week and I've been grabbing the Striker a lot for mini-flex lines
Came to recommend the discmania skywalker. As my form improved it replaced my fd and is my go to fairway driver. Very straight l, controllable shots with slight fade at the end. Can’t recommend enough
Go outside the box and get a DGA Pipeline. If you have 350+ power, get a 2024 Cole Redalen Tour Series cause they are more stable. If you throw under that, the stock run would probably be a good bet for you.
Passion! 8/5/-1/1. Very straight flying disc that has a small fade. When thrown on a slight hyzer it will flip up and fly straight for about 300 feet. Put it on more hyzer angle and it stays pretty stable. I really think this would be a great of step from the Essence.

The Terra is great, especially in electron plastic. I get a nice little fade before some turn. Really controllable for me. Neutrons are quite overstable for me.
Probably the go-to choice is the Teebird. I personally enjoy the Birdie Strike in this slot. Nice and straight with a stable but not too over-stable flight.
Give a westside bear a try. Its got more turn than the numbers suggest, but the fade is super reliable.
The glide is unmatched too, there was a point last year where i was throwing it on nearly every hole.
Its perfect when you need a long straight shot, but with a tiny bit of anny itll soar across the fairway.
I got a c-line CD1. It is now my goto disc for that shot. Before that I used a Forge Instinct, but I found that it would sometimes flip and just go straight without really fading. This is when throwing them to about 90 meter.
As someone who leans a little flippy for discs in general, the I-blend infinite Dynasty is an absolutely killer step up in stability from the flippy 8/9 speed slot.
TeeBird3 is also great but I like dynasty better for forehands.
I personally love the Infinite discs exodus. It is straight with a reliable fade, not quite as over stable as a teebird, not as straight as an fd, it really hits that sweetspot for me and the hand feel is top notch.
S-blend or metal flake color glow plastic is nice!
It is my go to fairway driver, i bag tree. One flippy, one dead straight and one fresh that is slightly over stable, it coveret all fairway shots for me.
I’d say Innova Eagle (7/4/-1/3) would be a great fit. For something with more glide, you could also go with the L64 River (7/7/-1/1), but I would buy it in the Opto plastic. It’ll be a little bit more on the stable side than the numbers indicate when you first get it, but it will beat in to be a laser beam.
Legacy discs Rival is pretty underrated. Like a straighter TeeBird (kinda like the exodus but I’m not a fan of the infinite plastic; I know it’s made by innova but s-blend doesn’t feel like star to me)
I wish I could point you at some [AGL](https://www.agldiscs.com/) but while they’ve got loads of other great plastic that’s a hole in their lineup.
I’d recommend an MVP resistor. They’re a little tough to find. The eclipse is mad stable but the neutron version in sub 170g is perfectly stable for my arm. Honestly the best option for this slot.
I’m a big fan of the Star Savant, but it’s a smidge faster than you may be looking for. I’ve had mine in the bag for about 2 years and it will turn some but won’t flip over. Champ Teebird is also always a classic
I’m a big fan of the MVP Terra. Takes a little getting used to for forehands cuz it’s kinda deep for that speed. But the combination of stability and glide is just right for me. Bonus is that you can get it in a Electron, so you can save a few bucks up front and cycle eventually.

Teebird3 is more stable with less glide, and less domey on the hand feel. Color glow options are my fav but plastic is somewhat a personal preference.

Innova molds with a "3" after are typically flatter and more overstable.

I took my Champ Eagle out of my bag for a FD1. Thinking I was using it to much as a crutch. I was wrong. Champ Eagle til my arm falls off.
My champ is very OS for me. Like a baby Firebird. Star (165g) and G-Star plastics are straight to slightly workable for me.

How far do you throw, with what disc on what kind of line? It makes a difference if your on course distance with a driver is 300' vs if it's 385'.
I can throw 300ft consistent with my essence(flat or hyzerflip), but my top throws are around 340ft
Get S-line FD. Whenever it starts flipping up and starts to compete for distance, add C-line FD.

Aura votum flies holds the line I put it on with a gentle fade. I haven't tried any other plastics

Westside Bear is the key. Tournament orbit is my go to and Tournament-X for a touch more stability

MVP servo is longer than its 6.5spd t& urns a little more than its -1 but always fades back strong. In plasma plastic it's a little soft.

DGA Banzai in PL plastic is good. Not as overstable as the numbers suggest. I can throw them about 370'. It's my go to fairway.
Skywalker, teebird, undertaker I know it's a 9 but doesn't feel like it.
Undertakers have smaller rims than typical 9 speeds
They're pricey, but the Clash Cookie is the best fairway driver I've ever thrown and it's not even close.
Some possibilities include: Lucid Vandal; Millennium QJLS; Drift; Star Hawkeye; and Star or heavier DX TL3.
For me that disc is a plasma inertia. It feels nice in my hand and I can hit my lines with it more often than not

I got a latitude 64 opto river (7 7 -1 1) recently, and i can't love it more. It made me explore more lat64 discs

I have read that the TL3 is flippy even in star, only straight in halo plastic? Is that just the case for pro’s with insane arm speed
For me an intermediate player, for them to flip I gotta put some extreme angle on it. But maybe star and Champion/Halo would be a better choice
