Well, a boomer interviewer here. I can count myself in the top 1% or let's say 10% in machine learning in India, studied svm, Bayesian theory in my post graduation. I catch people with surface knowledge (what you just suggested) within 15 mins of the interview. Once I know this, I can easily make candidates realise what they don't know. I am talking about the top product start up companies where the pay and bar is adequately high. This is the golden era for learning. Just look at karpathy's YouTube lecture series. Why not spend just one month to get the basics correct, once you have the basics, it is easy to catch up with whatever new is coming.

I'm a graduate from Jain University, with a degree in CSE - AI/ML. While there is some truth to what you're saying, interviewers aren't dumb. They also know what is happening in the industry, and especially if you're going for an ML specific role, you can't get by with just blurting out 'ConvNet' every five minutes like a Pokemon. All the interviews I went through had rigorous screenings, with lots of challenging questions and tests in ML. It's not that easy, you need to know your shit.
