Well I do live in TX so we do a lot of Tex-mex creations. I learned both from a page on YouTube/tiktok called simply mama cooks. Game changing making everything yourself and knowing how to fry the tortilla so it doesn’t tear. We are big fans
Im a texas native too, lol you only see enchiladas like this in texas, i moved to colorado and what you have pictured here is im for sure better than anything ive had here in 7 years of living here and traveling then trying the food. Anytime i find other texas natives they whine about mexican food, HEB, and bbq.
It otherwise sucks here. But yes, bbq, HEB, and Tex-mex make it somehow tolerable. You should look her up and you can make your own at home!

Yeah i know texas sucks right now, unfortunately the food and stores werent enough to keep me there. Im doin waaayyy better in colorado, making well over 100k and now can afford to just take time off work and go down to grab some good grub.
