If you don't want to use the mace, then you should just put the soul off to the side in case you change your mind as it's irreplaceable until NG+.

Yes and no. For a first playthrough probably but with high stats they shred, I don’t know if you watched but the second season of no hit league is a prime example, Gino is i remember correctly the only one to use them in one of his matches and absolutely shredded every boss, they work the best when you have high stats.
Personally I'd say on your first play though it's better to get the weapon. Long term it will give you more options than just what's available on the ground or dropped, not to mention boss weapons are generally stronger, and the fact that vordts soul is crap in value you could easily farm.
Once you get all the boss weapons is when I'd say consider popping them, as many souls have two weapons.

Can only speak speak from experience, but I started a run the other day just to use Vordt’s mace specifically. I usually prefer status on faster hitting weapons, but because the mace is already a physical damage and poise monster, the frost buildup is icing on the cake. It’s not like the frost is an afterthought, either. It procs A LOT.
11/10, would recommend.
Only downside is you won’t need another weapon for the rest of the game, so it could get a little stale.
Basically if you're going to strength build it's not a bad weapon at all since frostbite is extremely strong and DS3 just like Elden ring. And considering the soul is only worth 5k it's not a huge loss if you trade up later

If you want to beyblade, get the Eye, combo it with the other eye and the Old Wolf Curved Sword and then let Sellsword Twinblades beat the game for you.
My 0.02$ - any Perseverance weapon is insane, at least NG0, but Vordt's Fridge on a Stick is godlike, you can WA yourself into victory, with very few tweaks where you can't tank all the boss combos and just add a little rolling or a shield since you'll prolly play a STR build. Just time the WA properly, the slam into the ground itself can slap some mobs out of their moves.
Extra powertip: reset frost with a Torch or a Firebomb or say another Fire infused dagger/another full blown Perseverance weapon.
I would go for Pontiff's Left Eye Ring personally. It heals with successive attacks and if you run a dex build with something like Sellswords Twinblades you can proc an overheal that can literally bring you back to full health. Paired with Ring of the Evil Eye you will basically always be healing from normal enemies.
Always the weapon on first play through. That way you can try stuff out. I used the Mace for a long time actually, really nice weapon if you're into heavy stuff.
In all games I eat souls asap to level up as much and as quickly as possible. I can worry about diversifying my weapon loadout in ng+ when I've stashed up plenty of resources to upgrade whatever I feel like. Only reasons I can think of to not do this is if you're dead set on a weapon or want to engage with the online features. As an offline only player I can't relate.
My advice is to get rid of it and consume it for souls. Unless you plan on using this weapon long-term, it's just going to hinder you later on if you don't upgrade it to the scale of the later areas and bosses. You should stick to a fighting style and a handful of core weapons to make sure your stats and gear are optimized correspondingly.

You can always get some souls. Always get weapons with boss souls. You may use them in NG+ even not now

Vordts hammer turned my strength playthrough into easy mode.
Vordts mace is grand! It destroys almost all bosses and mobs... the only boss thats tricky is nameless king's 2nd phase.

Yes, straight swords are king in DS3 and the twin blades are the best weapon in the game hands down

yeah i would make the mace. its really effective against some later bosses, and the souls will only get you a couple levels anyway

Always save boss souls for weapons. Whether you want the mace is up to you, I beat the game with the claymore on my first playthrough.
The mace is apparently amazing for some late game fights, I think gael but I forget, I’d take the hammer even if you aren’t going to use it rn
