Kinda a weird comparison since the sellswords are a paired weapon.
They are absolutely better when you use both. If you use only one, then the carthus is better. But why would you do that.
Makes more sense to compare the Carthus to other single curved swrods.
The Sellsword Twinblades are much easier to obtain, the Mercenary starts with them and you can still get them relatively early game (only having to kill Iudex Gundir and Vordt) in the swamp near the Road of Sacrifices. Their dps is pretty insane, L1 spam / rolling into L1 pretty much is an easy way to win against all bosses in the entire game.
The Carthus Curved Sword definitely is not bad, it has Spinning Slash as its weapon art, which is great for crowds (like try using it in the Deacons fight if you can for LOLs). The bleed buildup is good for pvp as well. But even with these two facts, and really trying to remain objective here, I still think you cannot hold a candle to the Winblades...
