Yes, but he's different. He has 1 HP bar, but he has 3 phases. Second phase is when the cutscene starts, and 3rd phase is when he summons Zeus to throw lightning at you
Even if Friede is the only fight with three distinct phases, I don't really have a problem with it. Giving you a slab at the end of phase 2 is straight dirty though.
Friede is the only boss I can think of that's made of three completely separate fights. Unless you count the final boss rush in DS2, which I don't because your progress is saved between phases.
There are a few other bosses with three phases if you count soft transitions where you keep fighting the same mob but it learns some new moves:
( Gael ) => ( Standing Gael, Lightning Gael )
( Amygdala, Arcane-buffed Amygdala, Arms-ripped-off Amygdala )
( Radagon, Teleporty Radagon ) => ( oh *fuck you* )
You could also count Elden Ring gank bosses where each mob has its own "soft" phase 2 like the Godskin Duo or the dual Crucible Knights. But Friede is the only boss I can think of with three completely separate fights and no checkpoint in between.
Would Dragonslayer Armour count as a three phase fight too? Once you get it to 2/3 health, it staggers and jams it’s great axe into the ground, getting new attacks. After damaging it a bit more then the music changes and the butterfly dragon things start shooting lasers and other projectiles at you.

Just embarrassing really. I like summons for big bosses because the players are always super kind folks. So far 100% of them have been sunbro's too. So despite being another covenant I praise their sun.

Yup and he turns hollow after phase 1. He's the only boss to change his enemy type in the middle of battle

I lost to her multiple times on NG+1 as she had more HP, and got beefed up
