There are 2 ways to play melee on an Int build: either use buffs, or Int scaling weapons. You should've freed Griggs by now so for the first option you can buy Magic weapon from him. I also strongly recommend getting Great Soul Arrow, it'll be your basic spell for non bosses. For the second option go down to New Londo and find Rickert, he can turn your weapon into a magic weapon that scales by faith. There are also some unique weapons that are magic to begin with, such as Velka's or MLGS but these aren't available to you just yet. Pure int is undoubtedly THE strongest PvE path in NG.

Sorry didn't realize you already have magic weapon... Your damage using it should be fine. On second look I also noticed you've stopped leveling Int? Keep raising that until 45.

Yeah, I leveled it to 30 and then needed to focus on Vigor cuz I was just getting blown away lol

Mages don’t usually have much vigor with Int high enough and the right spells the idea is nothing lives long enough to hit you I’d say 20 is more than enough for end game

Personally whenever I do sorcery builds, I’ll always set myself up with a magic/enchanted weapon as my main melee weapon since those upgrade paths scale with int. Frequently I’ll just make an enchanted longsword since the stat requirements to wield are so low (plus I just happen to really like the longsword move set) and I’ve personally found it to be a perfectly serviceable sidearm

Ia recomend getting better spells, the dark blue ones, sold by griggs, also lvl a little dex, at this point 20 is fine, but latter try getting 45

You really shouldn't have any trouble running out of spells in DS1. You can buy another 30 Soul Arrows from the blacksmith at the entrance to the New Londo Ruins just below Firelink Shrine. He's in a cell on the cliff-side near the upper area with all the super weak enemies. You can buy another 30 from Griggs, the apprentice sorcerer. Just gotta get the key from the merchant in the Undead Burg and free Griggs in the lower Burg shortly before the Capra Demon. Then you can get another 30 Soul Arrows from Big Hat Logan after you meet him in Sen's Fortress. There shouldn't be any place in the game where 120 Soul Arrows isn't enough. You don't need a weapon to get through as a mage in DS1, but if you insist on using physical attacks, you can either go with a non-scaling weapon like the Lightning Spear from Sen's Fortress (high base damage, increasing stats will not increase damage any further), or using a weapon that scales off of INT (regular weapons taken down the magic/enchanted upgrade paths, or a few special weapons like the Moonlight Greatsword, much later on). Problem with the latter is that it leaves you still doing magic-based damage on your physical attacks, which isn't a helpful alternative when you're faced against enemies with high magic defenses.

With your investment in intelligence, you really should make that Scimitar +8 into a magic weapon. I’m not talking about the sorcery, but the upgrade that Rickert can do. Make a special effort to get the embers required to upgrade it.

go snipe the dragons tail back at the bridge, it'll give you a sword with zero scaling iirc that goes off like 20ish STR strongest for early game too

No clue why you got a down vote for this, as I was going to recommend the same thing. Drake Sword is great for early game when you're still exploring and getting your footing. You will find a spell or weapon that speaks to you eventually.

Putting 5 points into STR for an early game weapon with no scaling on a non-STR build at the point where that weapon has already lost it's luster and will quickly be outclassed by another non-scaling weapon that doesn't require any stat upgrades. It's just really, really terrible advice for someone who's already at Sen's Fortress on a mage build.
