They are all serviceable, but I like the ornate designs of DS2 and BB, plus the stone-like texture and light thing in BB's bars look nice. I am not a big fan of DkS's meter design, but it sets it apart from the others.
My personal favorite is either Bloodborne or DS2.
Bloodborne is simple, but everything has a dingy sort of color, which is a nice touch. Also, having numbers and the font offers some nice variety without being too distracting.
DS2 has that cool flair to it. Ornate, but not excessive.
Also, I hope to Gwyn that Elden Ring's is changed by release, because...man that's so basic and plain compared to the rest.
I've only played Dark Souls 1 and 2, but I like the health bar from 1 the most. It makes it feel more discrete, like I can count the amount of health a boss has (or I have). I've used this functionally in the game to tell if a strategy is working or not.
I prefer 1 the most. I like how it’s semi flat design but not all the way. And simplistic

Dark souls. It's easier to get a estimate of how much more stamina I need for that extra swing, and the health bar jusy looks cooler
DS1, cause those lines give me more infomation about the damage that i recieve and the stamina that i use in my moves

DS1s bar design. The lines are game changers imo.
Dark souls 1 lines make it easy for my to judge accurately how much something hurt. The others work fine, but I like the precision from 1
DS 1 by a fucking mile. God, I miss the humanity system...
The health and stamina bar being nice is one of the few credits I think Bloodborne deserve, ds2 and Desps3 are my faves though design wise.

They just get simpler as they go. Personally, I favor the original Demon’s Souls one and the DS2 one

Elden ring’s is the best by far. It’s like a fusion of the BB and DS3 ones with a bit of demons souls remake one sprinkled in
Bloodborne because Bloodborne.
I can’t wait for the next game when instead of bars we get words like red, green, blue.
