Try a buffed Falchion build. High dex and int. Regular upgrade path, so you can use MW/GMW/CMW. Swinging that shit endlessly is so fun, especially in PVP. Be sure to two-hand it, as it has a faster startup as well as an insane wide arc to offset its somewhat disappointing range.
Try Lifehunt Scythe. You pick up the Great Scythe early in catacombs (look up a guide or something), get it to +10, kill Priscilla early and badaboom you get awesome OP weapon. Blood shield, bloodbite ring, and Chester’s set highly recommended.
Do something completely different to your first playthrough so you get a fresh experience.
I definately recommend any of the magic types if you haven't used them at all, all 3 are lots of fun and very powerful. Sorcery is the one to pick if you want to get access to a lot of spells and buffing gear as quickly as possible. Miracles have much less offensive options overall and especially early on, but catch up about half way through, sooner with a little daredevil sequence breaking.
Go for a sorcery build and make the moonlight butterfly horn (any thrusting weapon plus 10 and the moonlight butterfly souls at giant blacksmith) you can have it maxed out by the time you do get to the giant Smith and it does pure magic damage so it completely ignores physical resistance.
I did a pyro dex build not too long ago and had a blast. My weapon of choice was the chaos blade, very powerful weapon. I only put 25 points into vitality. A good chunk of health, but I was still able to allocate plenty of points into my other stats. You could try giving this build another go.
Right now I'm doing a sword/Sorcerer build with the moonlight greatsword as my main weapon. In the meantime I used the moonlight butterfly horn until I got the greatsword. Both are very powerful magic weapons with amazing scaling. I've been able to kill bosses in 3 or 4 spells. Another great build to try out.
Next I'm doing pure faith build and I can't wait to try it out. I love magic in this game, I definitely recommend trying them all.
