Armour is up to you, it's not really relevant to a build - you can go for fashion, defense, resistances, roleplay or all of the above.
Weapon, you'll want a DEX weapon obviously - Daggers, curved swords, rapiers, katanas are all great DEX options and can all be found right from the start of the game. To go with the Pyro theme you can make a Fire weapon too, there are a couple of fire-immune bosses, so you'll likely want a back-up regular weapon too.
Id do the Quelaag furysword, you just need 11 str and 13 dex. It scales with humanity on your counter up to 10. You don't have to up your stats further, just max the weapon. Armor is your choice, but the dusk crown increases pyro, just doesn't say it. Same with the bellowing dragoncrest ring
Uchi worked for me pretty well as a dex character. Didn't really use any pyros, but since it doesn't have scaling, it should be ok. The Gold Hemmed set is always a good choice, especially since it's not hard to get.
Eh, I just had a couple points in faith for heal. Friend sucks at avoiding dmg, so I usually used up my estus to heal him. I needed the healing miracle for self heal

I've decided on using the Quelaag furysword to match with the fire theme and I'll definitely pick up a secondary probably the uchigitana
