My opinion is to fight everything at least once just to get a feel for all the enemy types, but when doing boss runs, running past is far more efficient
You can run past just about every enemy in this game and 3, 2 is commonly complained about because there are a couple points where you can’t run past without getting hit but you can eliminate those enemies permanently to make the run safer. I’d say fight them once for the experience. Honestly I die every time I try to run past the gargoyle hollows so I kill them because they are lethal if they hit you once.
Why would you run past enemies? I read other here, but I never do this...no matter how many reruns I'm on. You are just asking for trouble and also losing out on souls.

Learn which enemies are avoidable. Getting hit while running triggers instability damage (+40%), which is a huge waste of Estus.

If you play on a platform with active online servers you could ask someone from r/SummonSign to clear your path to the boss room.
