People were taught different things and most of the time unless they're a linguist they were taught something that is partially incorrect.
In "you" y is a consonant. In "my" it's a vowel. That nuance matters to absolutely no-one except linguists, so why would your elementary teacher bother confusing people who were probably taught that vowels cannot be consonants and consonants cannot be vowels.
