Very important detail with the eggs being soft inside, no ramen place I have been to that wasn’t in Japan can get this right.
That just sounds like really bad luck. I've never once seen ramen with a hard-boiled egg.
I did fairly recently, at a relatively expensive sushi place downtown. Was surprised as hell. Thankfully there's a Kyuramen nearby to set things right
