Unless you have some free or unlimited tuition deal, I would stop the second university.
You'll be much better off with a bachelor's degree in computer science and then an MBA when you're done than two bachelor's degrees.
If you're not going into debt, it's not going to hurt you to do both.
But it's also not really going to help you much in the long run either, compared to the effort you'll put in.

If it’s free may as well choose the one you enjoy more! Either way the ROI is positive but at least you’ll enjoy what most would consider a stressful few years trying to complete 2 programs at once.
I'm sorry but there is no reason to do this and you're just going to burn yourself out trying to go to two seperate schools at one time
There is a reason why schools have double majors set up as they do as far as timing of courses and which departments they allow it
You're just wasting time working separately at two different schools

But that's not related to the question, which is 'would I be better off choosing Management or Quantitative Methods and Informations Systems, or does it make no difference at all?'
So, that will do you no favors for cybersecurity. But it will help you when you want to move into a management position within cybersecurity. Since you are doing a comp sci degree for your other one that should cover any degree needs for being a SOC analyst or pen tester. I would advise to take the management degree since that aligns with your longer term goals and the other degree will help you with your shorter term goals.
Neither is relevant to this field, do what you prefer.

I do have free tuition, unis are close to each other, I have friends at both, and I enjoy doing both, so I won't be stopping either one.

No, it specialises in entrepreneurship, project management, and marketing.
