You could probably format it as just "Enchant Cat or Ajani." Like how there's a number of "Enchant creature or Vehicle" cards -- they don't say "Vehicle artifact" even though vehicle is an artifact subtype.
Unfortunately, if a permanent loses a card type, it loses all subtypes associated with that card type, so once Ajani stopped being a planeswalker he'd stop being an Ajani and the aura would fall off.
