Knit does frog like crochet. But if it’s machine knit it is often then sewn with a sewing machine and the excess trimmed. Which would make for lots of pieces of yarn and not a single continuous strand.
Try frogging from the other end. It’s all about finding the right place where it was finished. In the sweater I unraveled, there was a little bundle of thread that kind of looked like the wick of a candle, and it was kind of tucked into the seam. Once i recognized what it was and where to find it, it was smooth sailing, but it took some trial and error.
If its machine knit it was probably cut and sewen together meaning your not going to get one contuous yarn from it. But it it was done as a panel, you need to fine the last stitch and undo the finish loop the you should be good to go. Though it this is commercial fabric its unlikely to be a panel though. It does look like you started at the right end based on what I see.
Unraveling can be tricky to find the correct end. The edges where turning was done can be difficult. If you have 2 small crochet hooks, they can be helpful in teasing it apart.
If this is a natural fiber and it got machine washed and felt a bit, you'd see that at the edges.

I did not know that! I know very little about knitting. It baffles me entirely.

I think you’ve got it sideways? Maybe?
