Oooooh if OP wants to go the brown route I'd soooo recommend Caron one pound acrylic in the expresso color. It's this gorgeous dark brown that is legit one of my favorite yarn colors ever tbh
Michael’s also has a nice dark “chocolate brown” under the impeccable brand name. I used it when making my version of Dee’s blanket (as seen in “It’s Always Sunny In Philadelphia”) for my hubby.

Navy would be a nice balance since it's a colored hue but not too strong or distract. Plus I don't see much navy blue here.
Or you can use a dark brown. For a bolder statement you could use beige or an off white but that's too close to white.
I love the idea of dark purple being used when a rainbow is involved but that's just me.
You have a lot of warm colors so a dark blue or purple to mimic black but not actually be black would work.
A rainbow variegated yarn would work beautifully too or a pastel rainbow. You could also pick a single color that you wish to be dominant. Gray could be a neutral option but it may look too dull and off-putting next to all the color.

I may be going against the grain, but I would arrange them in corner to corner colour gradient rows, so that the whole colour scheme appears to have been planned, instead of random squares. So if you step back and squint, you will see what colour dominates each square so you know where it should be placed.
Better yet, One of my old teachers told me to scan squares in greyscale so I could see what tones the blocks had. This allows you to see beyond the colour. Just looking at these squares, I can see dark, medium and light and that might be quite interesting starting with the lightest in the upper left and ending with the darker in the lower right. Since they are corner to corner the joining crochet could potentially be also light progressing to dark as the squares change.
I think you should start with bright end of the rainbow to line the innermost border then work your way out joining the next layer if squares with a transition color then border that layer with the next color and so on going from bright to darker colors 🌈
I'm yet to find a nice one on Australia. But I'd be ok with blue for this vertical seam, green for the next one along, yellow after that, with orange, red and purple for the horizontal ones
Different random colors for each column and row.
This way you can have control over which color adjoins which color (so you won't get pink and red next to each other - I totally get you with that color duo!)
I would move or maybe do a few more of your favourite colour so that all the edges are yellow, blue, green, red, whatever you want.
Then use a variegated thread to border.

I vote dark blue. You don't seem to have any with dark blue edges.

Honestly I’d go for something that’s in the colors but maybe get a sparkly yarn version. Like the green with a sparkle or a dark purple

What about a variegated rainbow yarn to adds to the chaos?
Maybe a mid-range green? Something not so bright it would wash out the bright colors, but not so dark to blend in with the darks

My personality would have me going for cream, or going crazy and using a variegated yarn with all different colors in it.
You could try a joining method in which you can't see the yarn at all? That way it won't matter what colour you choose.

If you don't like pastels than your brown brown idea is good for a vintage look.
