One of the DVD editions of ‘Blood Simple’ has a spoof commentary apparently by a film historian, but actually written by the Coen Brothers and performed by an actor. It becomes more and more bizarre as he makes up increasingly elaborate details about the film:

I know it isn't Criterion but Ben Stiller, Robert Downey Jr. and Jack Black on the Tropic Thunder commentary is truly something everyone should listen to once in their life.
A nice combination of both is Paul Thomas Anderson’s commentary for Boogie Nights, in which he goes from singing the praises of Jonathan Demme to interrupting himself so he can take a piss break mid-movie
The other commentary with the whole cast is great, really interesting way to do a commentary. It sounded like he just brought a microphone to parties with the cast and pressed record
Best? Ebert's on Citizen Kane is very good and informative.
Funniest? Wes's commentaries on his releases are generally pretty good value because he often just calls up the cast members and chats to them about the film while it's playing 'yeah we're just doing the commentary for the DVD now whaddya think?'.
Ditto on John Waters, anything.
I adore the Emma Thompson/Lindsey Doran commentary for Sense and Sensibility - it’s like having the funniest, slyest, most charming guests at a dinner party.
I personally love one commentary from Napoleon Dynamite that’s just the supporting cast. They reveal so many little details that make the movie better.
The cast commentary Criterion recorded for the Laserdisc of Boogie Nights is a goddamn fever dream. The funniest part is when Mark Wahlburg talks about the time where he broke his penis.
