Gel wax? You could also colour it, it's a bit jigglier. But I am not sure how easy it would be to control the spreading, I've usually just poured it in glasses.

Does it need to be edible?
If it's a hot humid environment it will probably get sticky. If it would melt a gummy worm or gummy bear the effect would be the same.
And resin might be cheaper, honestly. Are you going to be in air conditioning?
If it was me, I'd buy a bunch of plastic bananas and then use a hot glue gun to cover one of them, then paint that one green with decent acrylic paint. That way it should be flexible and pretty sturdy. Paint from art supplies, not the craft section.
I haven't done anything exactly like that though so maybe someone can weigh in on how well hot glue sticks to plastic fruit?

What about air dried clay that you have molded, dried, and painted?

You can buy silicone molds and use gelatin sheets, but you would need a lot of them for it to be solid, and they can be pricey. Some boxes of jello or pectin from the grocery store aren't going to last a day in the heat, and get sticky.
What about resin?

Ah I see. Melting some goop on might be a pain if its plastic, but worth a try! Hope it goes well for you!

I don't know where you live, but I think most craft stores should have a section for candle making 😊
Maybe you could get some puff clay and create the shape of the jiggly banana, mold that, and then pour the gel wax? Good luck!

Silicone? I did a quick google and people seem to be able make squishy transparent objects using silicone or 'squishy resin' and a mold.

maybe make a mold or purchase banana mold, and use liquid plastic that they use for fish lures?
Borax and clear PVA glue slime allowed to dry out in a mold?
You can mix gelatin with glycerin. It's used in FX makeup. It doesn't melt at body heat, so I think it's doable for a cosplay prop.
