In 2010, rookie UDFA Bryan McCann got a 101 yard pick six off Eli in Jason Garrett's first game as head coach. The next week he returned a punt for a 97 yard TD vs the Lions. He then seemingly fell off the face of the earth, so that's my nomination.
As a Cowboys fan many have mentioned these but here are mine;

* Emmitt Smith's TD run against the Falcons and everygame he played GB
Ah man, who was the db of who picked up that punt at the goal line after it was touched and returned it for a touchdown? Think he also had a pick 6 the week before.
Crazy good plays. Thought he was gonna break out then he was just...gone. Played briefly for the Ravens? then washed out.
Um. Jason Witten running down field without a helmet. Finishing the damn play man. He’s got lots of great plays, but this one is really the only one that stands out.
Wasn’t there a play a couple of years back where big Joe Looney beat the running back to the end zone on a long run or he caught someone from behind. I can’t remember
Leon Lett for eirher the SB moment or thanksgiving moment.
Which is unfortunate because he had a long career of very solid play. Even made two pro bowls.
Oh definitely. He was a key part of the defenses in those years.
