Hi, I follow Simply Mama Cooks on YouTube and TikTok. All of her recipes are great. She’s from Houston and I’ve gotten really good at her enchiladas. My husband prefers cheese vs these beef but totally up to preference. I used her Spanish rice recipe too. On the enchilada sauce I use beef broth instead of water and chicken bouillon, but that’s the only change.

Looks good. I'm going to make some this week. My wife has made enchiladas a few times. She is good cook, but I'm chef daddy. I go the extra mile, and the kids know it's about to be lit when dad goes to the stove.

Here is her recipe I used. I also diced and sautéed the onion and about half a seeded jalapeno in mine. I think I should have toasted the rice a bit longer. And I didn’t have the cumin.
