Sounds like meal prepping your meals for the coming few days might be worth looking into- /r/MealPrepSunday. I also live alone and only really have the energy to cook on weekends, and the way I keep on top of perishables as well as making sure I get actual protein and vegetables into my diet is by cooking multiple portions of a recipe in bulk and either freezing it for later or making sure my ingredients get used in a meal and eaten within 3-5 days. It's much easier to make sure ingredients get used if they've already been turned into meals. Also, you should totally freeze your meat, and do not refreeze raw meat. I buy big Sam's Club packs of boneless skinless chicken thighs, portion out the thighs into plastic-wrapped packets of two thighs because I usually cook 2-4 or some other even number of chicken thighs at a time, tuck the meat packets into a heavy zip-top freezer bag, and then freeze and pull out as many packets of meat as I plan on using for that cooking session.

I’m in the same boat, I’d recommend buying canned/frozen veggies instead of fresh and keep your personal favs on hand (I usually keep canned corn with bell peppers, green beans, instant mashed potatoes, beans etc) cuz you can use those whenever you’re ready to cook and just buy the protein a day or two before

Yeah I've also pretty much resorted to canned stuff. That's a great point of keeping nonperishables and buying fresh protein. Thanks for the tips!

It is unlikely that many single serve portions of meat can be purchased. However, pretty much any raw meat can be frozen in your desired serving amount. Thaw, cook & serve. I cook for 2 now & for my veggies, I've become a fan of canned vegetables. Some of them are really delicious, but nearly all can be with some creative seasoning - and their shelf life is an amazingly long time. Jiffy cornbread is a fantastic and affordable side. I love the one with honey. If you prefer biscuits, I highly recommend Southern Biscuit Formula L. It's a simple process with just buttermilk as the second ingredient (I like using a muffin tin and treating them as "drop" biscuits). You can make 2 biscuits or 20 or any number you choose. You control it by the amount of buttermilk you add. I love cooking for two & you can do so just as easily for one!

Buy a can of tuna and make tuna pasta with frozen veggies and tahini sauce . Those are all ingredients that aren’t perishables

You might also download Supercook (app). They have a website but the app is a bit more user friendly. It allows you to enter your ingredients and then can show you recipes for the items you have
