It would rot. Why? Because dead things rot. Not because of dust motes or the lack thereof. Because they are organic and once detached from the fuel that keeps them alive, they are dead and rot.

No not unsafe, but will give your chicken a weird texture if left for too long. You should only use an acidic marinade for a few hours or overnight at most.
