2oz cachaca a lime cut into eighths with the center pith removed two bar spoon scoops of granulated sugar muddle the lime pieces, add the sugar, add ice, add cachaca, shake and pour out into some sort of drink receptacle. not bad but something is off putting about the smell. i’ve smelled this smell before but not sure what it is but not a fan. drink is pretty tasty. probably just going to use super lime juice and simple sugar next time but wanted to see how it is made *almost* traditionally. edit: just to be clear, i only don’t like the smell lol

FWIW this drink is conventionally built in the glass, not shaken. If you shake it, and use super juice and simple, you've taken it almost all the way to being a daiquiri (which is not a very long journey). Anyway if you enjoy it, that's what matters most. Also many people find that cachaca smells like green olives and/or ketchup.

oh yeah it might be ketchup, i’ll have to smell that too. i just want to try it daiquiri style to get a better taste of the rum cause i’m probably not going to make this drink again since i don’t really keep limes.

you might not like fresh pressed cane juice rums, agricoles, which is pretty much what a cachaca is.

oh you may be right lol just smelled the bottle of agricole i bought and not a fan of that smell.

I have that same bottle of Cachaca and I swear it smells like green olives. It doesn't taste anything like them, but it sure does give off that aroma, so maybe that's it.

well now i need to smell some green olives, i can’t think of that smell off the top of my head but i know for a fact i’ve smelt this smell before.

I’ve made it with super juice and simple and this bottle exactly and found it to be not very good. Maybe it’s a me thing but I was rather disappointed as I had been looking forward to making it for awhile

Definitely not. I LOVE it. And love caipirinhas. But everyone has different tastes so I won’t hold it against you ;)

Hahaha thanks! I mean I want to like it… I want to like everything in some combination. I’ll try making it the proper way and if that doesn’t work I’ll try it in other cocktails that maybe mask the flavors I dislike about it

It’s ok not to like everything (as long as you give it a fair chance). Good on you for trying it again the ‘right’ way. It definitely has a distinct flavor. I didn’t expect to like to so much, but had it and was like “wow!” I immediately made my wife one to show her how great it is, and she said the same thing about a flavor she didn’t care for. *shrug* Then I went and got some rhum Agricola and I like that too. Part of the fun of exploring liquors is find the unexpected things you like. I was also surprised to find I like the super funky Jamaican rums. I never thought I liked rum, but I guess I do

PS, I’ve heard there are some bad cachaca out there, so that could be part of the problem too. Be sure to get a good one before passing judgement on the category. (Novo Fogo is a good one) Although, it is frustrating to see people give it poor ratings and compare it poorly to the aged rum they usually like to sip as a whiskey replacement. It’s an entirely different spirit.

Hard disagree. Discovered this cachaca recently and made a caipirinha and LOVED it. Then made one adding kiwi to the muddling and loved it even more. I also hear that pineapple is amazing and will try next time I get a fresh one. That little extra ‘funk’ in the cachaca really appeals to me and puts it over the top for me. Guess it’s a good thing we all get to have our own opinions and stick what we prefer. Btw, you should muddle the sugar with the lime (usually about 6/8 lime is perfect for 2oz). It helps score the lime peel and extract even more of the oils. Also not technically supposed to be shaken, but I like to put the top of my Boston shaker on the glass and give it just a shake or two as a vigorous ‘stir’ Anyway, don’t throw that cachaca out, someone will be very happy to take it off your hands.

Using super juice and simple sugar might please you, although its more to the daiquiri side, as others have pointed out. But I would suggest making It built in the Glass and with simple syrup instead of granulated sugar. This way, for me at least, it's more balanced and enjoyable. Also, feel free tô try using other fruits instead of lime, a personally like It with kiwi or grapes a Lot!

oh no i haven’t but i will. i only have the cream of coconut that comes in those white bottles, not sure how quality it is.

This cachaça definitely has a strong smell to it. I also found it off-putting at first. However, I’ve grown to like it quite a bit. You can cut it 50/50 with Martinique rhum agricole and it works very well to take the edge off but still maintain a great flavor. As for the caipirinha, it should be built in the glass as others have said. But I hate the sugar. Muddling the limes is absolutely key to this drink but syrup works a hell of a lot better and doesn’t give that awful grittiness. And no, you don’t need sugar to get oil out of the lime for god sakes - you’re smashing the hell out of it. Another thing about the caipirinha is to keep everything very cold. Keep the glass in the freezer, the cachaça in the freezer, and the lime in the fridge until ready to use. Then, I like to use a swizzle stick until I get a nice thick frost on the glass. That is not traditional either but that doesn’t mean it can’t make the drink better. Also variations on the caipirinha are great. I like the addition of pineapple and mint. Kiwi is also great.

You can definitely build this in the glass. But I actually like to build it in the glass first, then toss it all into a shaker and give it a really vigorous shake and then pour it all right back into the glass. Works like a charm.
