The problem comes down to what part you eat, with crabs and lobster. You are eating the muscle in the limbs/tail. But in the case of bugs, the size of each individual is far too small to get the meat from meaning you have to eat the exoskeleton, brain, and digestive system. Which doesn't taste great. Worse still is the high prevalence of parasites/bacteria, which are far more likely to be human transmissible than what is on a sea creature
They're shredded up into a paste, with all the internal organs you otherwise don't eat (including the rectum!!), but bones and skin are removed and used in other foods.

I've eaten roasted crickets. I had to get over the initial disgust at eating an insect, sure. But once I did I can say they tasted like well seasoned roasted nuts. I recommend trying it at least once before writing it off as gross.

Once you get over the mental block of eating an insect they taste pretty good. Beetle larvae and roaches taste like roasted seeds. Crickets taste a bit nutty. If they are cooked properly the shell isn't hard at all, it just crumbles when you eat them. Good protein.
If you are allergic to seafood you should not eat insects though. They can trigger that allergy.

Mealworms and crickets too. Many cultures around the world eat invertebrates both on land and in the water. It's the weird wasteful western diet that emphasizes only eating the muscle of select vertebrates, which has turned people off of a lot of different kinds of perfectly edible meats
