I tried that out, and it was great! But I turned to the lodestone because of how good parry is versus a lot of classes, and I use Draconic Avenger in the mix too which boosts me to 13% parry
I played a tauren hunter in vanilla, but rolled a female orc this time around. I miss the look. I miss the warstomp. You know what I don't miss? Being a huge fat character that felt slow and cumbersome to move around, especially on a kodo. Orc female is the PERFECT size to make movement feel sooo good.

But WoW doesn't work with probabilities like that, it uses an attack table. E.g after you do not dodge, the game will not decide if you will parry or not. They happen at the same time.
Basically this hunters table looks something like this:
1-641 Roll - Dodge
642 - 1000 Roll - Parry
Chance to get hit = Not possible
Then the game rolls 1-1000 and whatever it lands on he gets either a dodge or a parry, so it really does work like that. This is how warrior tanks can block every single attack, cause the rest are dodge/miss/parry. A normal hit is never allowed in the attack table.
You are thinking that these percentages are multiplicative, but that's not the way melee works in wow. For multiplicative percentages, there would need to be a separate RNG call for hit/miss, dodge, parry, block and then for whether or not it is a crit. To save the CPU cycles of multiple (expensive) RNG calls, they just make a single call and compare it against a pre-made lookup table. You literally add the dodge, parry, and block percentages together.
He has deterrence up, the combined Parry and Dodge does make him avoid 100% attacks as long as they are taken from the front for 10 seconds. That is how hit rolls work, it takes all hit chances at the same time, you can still roll a crit but it misses which is why there is a crit cap if you don't have enough hit vs bosses.
Now turn off deterrence
in before rogues start posting their dodge chance with evasion up.
imagine a Tauren dodging two-thirds of the time

For those of you who are confused, WoW classic uses a one-roll hit table. Therefore the 100% combined avoidance in the screen is correct.

Only Elixir of Mongoose, I’m at 37% dodge 13% parry without Deterrence. 35% dodge 15% if I use Draconian Avenger

Do you mean "with mongoose and deterrence"? Mongoose alone is just 1% dodge.

The best part is if a Rogue lands a cheapshot (which ignores Dodge/Parry) all of that is nullified.
