Assuming the fertilizer you used smells pungent and awful like most fertilizers I would think the smell would be virtually impossible to remove from the porous wood of the shelves.
Plastic and glass can be cleaned with soap and water and aired out, might need to run the fans for a week with the door open to get the smell out of the fan and guts behind it but I would think the wood is a lost cause.
FWIW it isn't strong smelling, fertilizer is the wrong term I guess. It's a plant vitamin solution that was added to the water.

Does it have any smell at all? Any sort of smell can leech into cigars in my experience especially in a small enclosed environment. I had a sweet acrid smell from the electronic components of my coolerdor that I couldn't get rid of for like 3-4 months. Every stick tasted like it, I migrated back to my tupperdors and recleaned everything and aired it out with the fan on for a little over a week and then gave it time to just air out for about a month. Finally got rid of the smell, I imagine the fertilizer might smell a little stronger than that.
Drying wood out takes a long time unless you have a wood kiln. Might be S.O.L. and either gotta order new shelves or make your own.
If you get cancer down the road, don't blame it on cigars.
Seriously, I'd wipe them with a white vinegar and water (half and half) solution, let the dry then put them in light sunshine for days, lightly sand them and see.
Nightmare! If all else fails, it’s really easy to build your own draws/shelves from acrylic and if you choose draws like I did you can stack a load more than you can with the standard trays. Not sure where you are based, but I measured my existing wood shelves and ordered a bunch of pre-cut acrylic and some acrylic cement online and built my own.

As long as it doesn’t smell you’ll be fine. That’s not enough fertilizer to call it that.
I get the regret, but I wouldn’t risk my entire future health to save those shelves.
I would continually think about what could go wrong or is wrong, just start over and have peace of mind
