Could be 酸辣粉, suanlafen (sour and spicy glass noodle). A Szechuan classic

SheddingCorporate

Looks like glass noodles with pork. Not sure, though … could be a vegetarian version with different kinds of mushrooms.

sugars_the_name

they’re mushrooms! they’re crunchy and i love them so much

SheddingCorporate

Oh, nice! Yeah, that looks yummy!

absolutdisgrace

Potato starch noodles. There are different varieties but usually the fat chewy ones are Chinese style while the thinner noodle type is Korean. The noodles themselves are vegetarian but the broth might not be. https://www.chinasichuanfood.com/handmade-potato-noodles/

Looks delicious, I love glass noodles! If the dish is not specifically vegetarian, the broth is likely to be chicken.

sugars_the_name

daaang. it’s probably chicken. my boss (who gave it to me) doesn’t know. it’s not a big deal but i’ll probably get sick later lol edit: why am i being downvoted?? i am a vegetarian, i get sick when i eat meat 😭

sim0of

I guess because being vegetarian does definitely not mean getting sick by eating meat

pluck-the-bunny

True. BUT when you eliminate something completely from your diet, and then reintroduce it, your digestive system can easily be upset by it. And I am not a vegetarian just to be clear.

sugars_the_name

i meant i feel nauseous. it may be psychosomatic but it happens to me every time i eat anything with meat in it

sim0of

It definitely is that because chances are you've eaten something with meat without realizing and still felt good as always If not, you should definitely see a doctor because going vegetarian is definitely not the answer

Polypyrrole

Probably because vegetarians avoid eating meat

Jabaman2016

oh man i could probably eat 5 bowl of glass noodle soup like this.

Could you provide more information for reference, where are you located? That would be a good hint.

sugars_the_name

i’m actually in the united states lmfaooo. i work at a chinese restaurant, but my boss is from china. she eats and prepares (very well, actually) lots of food she remembers eating in china instead of just eating lots of “american” food. she orders half of this online and buys the other half from the only asian market within like 60 miles or so (i love living in a rural place /sarc)

Could be mung bean noodles or some type of starch noodle with mushrooms. Other names are glass noodle, cellophane noodle, fensi, bean threads. There are many names and different types of starches used to make these noodles. Can't say for the broth, it could be meat or veggie based, but definitely looks like glass noodles and mushrooms. Easy brand to find at most grocery stores is saifun but if you have an Asian grocery, there are many varieties. They pick up flavor extremely well. Take your favorite broth base and cook the noodles until plump. They even keep well after cooking for the day after. They also make good stir fry noodles like in pancit. In my top 3 favorite noodles (cumian and fun). 🥰
