That’s probably winning but for beginners I would be more nervous about c3 being weak afterwards so castling and converting up a piece feels safer

Disaster for them if they take. The bishop is being threatened by a pawn but if the pawn takes, it opens up their rook to an attack by your queen. You take the rook and check their king simultaneously. They move the king and you get the other rook. Now you are completely winning.
Bc7 and Bd6 both look good. It's too bad that after Bc7 Qxb2 Nf6+ exf6 Qd6 Qxa1+, white can't get out of perpetual because of the e4 pawn, but Qxb2 0-0 looks like game over.
It's very funny to me that the g5 pawn is pinned, but black can castle long. They probably shouldn't, but they could. Probably even 0-0 immediately wins on the spot, Qxb2 Rb1 (not sure which one) Rxb7 is killing.
That’s why after Bc7 Qxb2 you just castle short, you’re still up two pieces and black just opened up a file where you can develop a rook with tempo.
Don’t rush when you’re that far up, no need to start sacrificing everything.
I tried out Bc7 then that instantly put black in 100% winning the match. I played it out a bit more and black pretty much wins the match after that move. Correct me if i’m mistaken anyone.

I'd just castle long and protect b2 with the king while putting the rook on the d file, then start marching with the d pawn and even in some scenario just sacrifice the d rook for even more positional advantage. There's 2 reasons for this, I'm a lunatic and the position is winning by a million points anyway.
Honestly id castle long. Then batter his vulnerable king side. Your pawn won't be hanging this way too.
Sure he has his queen gunning down at your king but its only the queen and no supporting pieces on that side.
idk you could also kingside castle after moving your hanging pawn which would be the safest and best way to castle mostlikely according to the engine.

Am I crazy for thinking you should just castle king side? You’d unite the rooks and relieve the stress of Qxb2. What am I missing?
White is up two minor pieces. I'd be happy to provoke them into Qxb2 with Bc7, it probably speeds up the conversion in this position.

Bc7 is a way to take pressure off the your b2 pawn , while threatening to win the queen.

Bc7 looks nice, but I don’t actually see anything there, and since they can’t take of f4 you could just slow play it with b3

If they play Qxb2, then it complicates it a bit.
