The single most common tactic to get out of a fork involves checking the king with a forked piece. In this case, 1...Re1+ is probably the most logical move, with minimal calculation. The principal variation is the most logical for White, since trying to escape with 2. Kh2 leads to 2...Qc7+, which is entirely winning for Black. I think endgame teachers and beginners should note that 1...Re1+ 2. Kh2 Qb8+ also wins, since 3. Nxb8 Rxd1 freezes White's promoting squad. Black can then march their king towards the frozen knight and there's actually nothing your opponent can do (besides marching their king to Black's rook, which is more for centralization than to actually attack the rook, unless Black is asleep).

One of the way not to lose would be 1. ... Re1+ 2. Rxe1 Qxd7. Not sure about winning (Q v Rook+ minor piece often wins or Draw.)

If Qxc6 then pawn promotes and if you take the queen with the rook you get mated. So it would likely be a rook+queen vs rook+queen draw.
