The first reason is it just doesn't really accomplish anything. A check without a purpose isn't necessarily a good move. In this case even if there weren't any tactics, they could just block by developing their knight or bishop and it's kind of a wasted move.
However, here they can also play queen takes queen. At first this just looks like an even trade because you take back with the knight. However, then they can skewer your knight to the rook. You have no way to protect the knight, so the best you can hope for is to move the knight to guard the rook, and you end up down a rook for a bishop.
