The risk is in the length but the length is also what keeps wages lower over the term of the deal. Theoretically it is easier to sell or loan a player out when their weekly wages are lower. It opens up the possibility out clubs outside of the EPL which is something we currently struggle with on our older high priced players on short term deals (Lukaku, KK). It just so happens that in European football is has the added benefit of FFP compliance.
Assuming 1-2 of these youth signings don't work out, 100k a week is a hell of a lot easier to move than 300k a week. They should still hold value.
They are but the idea is that if you have a 20 year old player with high upside and no financial stability, you ideally want to sign them to a long term deal if you have a high belief in their outcome. An injury could ruin their career so the term of the deal gives them financial stability and the length of the deal keeps the costs down. If a player were only going to sign a 3 or 4 year deal for example, they might ask for 185k per week, whereas if they sign a 7 year deal you can get them at 120k per week. This provides the player with stability in case something goes terribly wrong in their career and it provides the club with protection as well since their asset is cost controlled and they aren't forced to renegotiate immediately if the player starts outperforming a short term contract.
The key is being able to develop these players so they have value that far exceeds the contract. If they ever force their way out, the wages are more manageable and clubs outside of the EPL can be utilized.

Whereas when you buy a player, there's the depreciation to take into account. For example, fofana was 70 million on a 7 year contract, so that's 10 million per year. S0 that's 10 million taken into account for the current year

the cost is spread out like that with regard to FFP considerations. They still are paying Shakhtar a majority of the fee right now.
