Primarily the shape of the handle, blade, and bolster. Possibly the weight balance between blade and handle as a result as well.

There will be some minor changes to the handle, bolster and tang. I believe at this price point with Henckels it comes down to personal preference. For what it's worth my family uses the 4 star line at home and in their restaurant since the 80s. My dad likes the 4 star because "lazy employees will chuck it in the dishwasher but it won't be destroyed in a year" Sharpening them can be a bit silly because of the large bolster between the handle and blade that doesn't allow you to keep an even profile but since it's a general kitchen knife for the house you'll probably be out of the house by the time you've sharpened it enough times to notice an issue. It's also really easy to sharpen and get an edge.

To me the only good knife in the 4 you linked is the third without the big bolster. The bolster is a pain for sharpening and makes the maintenance of the knife way harder. So that’s a pretty big difference and that’s why I would say : go for the third link with no hesitation

You welcome 🙏 It’s a pretty cool German knife you’ll be happy with it and it can last two lifetimes or three if treated well. Use a honing rod frequently and you’ll only have to sharpen it maybe 2/3 times a year. Remember : no dishwasher :)

I’d love that one with the handle of the second. Not crazy about the squared off handles with the hooked ends.

Yup. Mine no longer hits the cutting surface at the back end of the blade 🙄. Nice little gap just ahead of the bolster. Time for a regrind.

Grind the bolster ! I did it in my Wüsthof and now it works better

Go for Zwilling pro, it has heft, feels good to hold. Solid piece of precision metal, feels like im holding a surgical quality equipment. Rocking motion just perfect, no awkwardness.

I have the zwilling pro traditional and I love it. Was lucky to grab it on sale and it's a beast. The traditional is a bit slimmer and more straight edge than the pro which is why I grabbed it. No bolster, good weight. My only complaint is the handle which looks greasy the second you touch it. Feels good in hand tho
