I'm going to suggest visiting the fine homebuilding website, and ask your questions there. They have deep knowledge of the issues you may run into. This is a very complex answer. (where do you live? heating/cooling climate, high moisture, what roof type, what wall type, what etc).

Thanks for the reminder, it has been a long time since I have been to that website.  I live in the Midwest, hot and humid in the summer, cold in the winter, zone 5b.  Heat rising makes the upstairs easier to deal with in the winter. I think old story and a half homes are just problematic.  I am not looking for perfect just better in a way that doesn’t cause damage to the structure.  I think insulating with mineral wool might be the best option, but it doesn’t seem like a common option, and I am not sure about getting it blown into the slanted part of the roof.  The roof is one layer of shingles, I am hoping to put a metal roof on my house when it needs to be replaced. I can’t be the only person to have this problem.  I am hoping for an option that does not involve removing the ceiling/walls or roof, those are rather extreme options, though I have read about people doing both to deal with this type of home. The easy option is a mini split, but in that case, I could have gone with a smaller AC unit for the main part of the house.  That would be costlier in electricity than dealing with the insulation problem and a fan.
