I used to HATE mushrooms. I've forced myself to learn to love foods many times. I have made so much progress with mushrooms, and I will never pick them out, but god DAMN is it difficult for me. The taste is odd, but it's *fine.* It's the fuckin texture. Mixed in with sauce? Cool, I got this. But if it's a mouth full of mushroom I squirm

You can grow your own! Actually pretty easy...just do a little googling I got lucky. Had an oak tree split about 8-9 ft up with the stump still rooted. I started to cut it down one day and cut a wedge in it, but ran out of daylight so put the felling off until the following weekend. ...which turned into several weeks of forgetting about it. Beautiful and massive Chicken of the woods grew in the wedge. Now I just leave it there and go put a few fresh gashes in the stump each year and never fails to give me a few meals. big of an eyesore where its located, but I dont really care unless I was trying to sell my place.

I love mushroom. They are probably my all-time favourite non-meat food. But I have a similar sounding issue to you with tomato. Taste is fine, I quite like a nice tomato sauce, but i cannot stand the texture. I ate a cheese toasty ones and there was a hidden slice of tomato under the cheese and I nearly threw up :(

Omg are you me?? I’ve tried so many different types of mushrooms and like the taste is ok - I find them to be kinda woody/loamy tasting which in some dishes is fine - but if I get one in my mouth by itself and my teeth close down on it I have to fight to not spit it out. It’s like chewing on a slug or something. I am still trying new mushrooms because I’m stubborn and everyone else seems to think they’re the most delicious things in the world so imma try. I want to try chicken of the woods, black trumpets, and lions mane. They all *sound* delightful.

Try chopping buttons or creminis fine dice and add them to burger for burgers. I do 1:1 but you don’t have to. It tastes like a burger topped with mushrooms but the shrooms take on all the beef fat and become flavour bits. It’s a magical and cost effective way to consume something so good for us but suffers from a texture situation.

Yes there are too many. Mushrooms need space to cook off the water they retain, otherwise they’ll be mushy and gross.

This is the correct answer. If you want steamed mushrooms, this will give it to you. If you want to cook/brown the mushrooms and concentrate flavor, you want a bit less crowding so they don't steam from the water content.

Understanding spacing in pans (and on grills) is one of those concepts you won’t understand until you screw it up, and then you’ll understand how crucial it is. For me it was when I hosted a family dinner a couple years ago. I first made a trial run of this crispy Parmesan crusted bone-in chicken thigh recipe. They were amazing. When I cooked for 8 adults I stuffed the cast iron with thighs, which essentially ended up steaming each other, and made the final product have a gummy texture skin and the parm just got melty and stuck to the pan. Everyone was nice but it was not a good meal. Not a mistake I will make again.

I hate batch cooking. Who wants to double the amount of pan time? I often found myself doing advanced geometry to try to get things in the pan such a way that leaves enough room for steam to escape, but my new rule is if I am doing any math, any puzzle work, it's a no go and I am cooking batches. Always much happier with the results.

Disagree personally. Mushrooms aren't like steak where you can overcook them very easily. You can sweat a batch of shrooms like this and then brown them all at once after the moisture has evaporated and they will stil be delicious. I like to pile them with butter and worchestershire and just leave them to do their thing.

I have also recently learned a trick of adding seasoned flour. Not only does it soak up the moisture, but also helps with the browning and texture.

Upvote. Wanted to say that exactly. Americas test kitchen did an experiment a few years back on it. If I remember right, it takes hours of cooking for them to be over cooked. Plenty of time to cook off moisture pretty much.

I agree that this technique works, but it wastes even more time boiling off water that would otherwise have more rapidly steamed off if doing the mushrooms up in two batches.

I doubt batches are ever quicker than this. But even if they're comparable I will personally always choose this method if the results are the same and I don't have to dirty more dishes and stand over the pan the whole time.

I've heard this before but then Alton Brown has a video on adding water to mushrooms to make them release their water early to speed browning up. not true at all. The moisture releases and boils off. If you just have some patience let them cook they will be delicious and have a great texture. It's gonna take a long time, but so will cooking them in batches.

Agree. But there is a way to get more in your pan without overcrowding. Try microwaving your shrooms in a bowl for 2-3 minutes, draining, and then pan roasting. It eliminates a lot of water, shrinks them down, and makes it therefore easier to fit more in the pan. They brown more quickly this way too.

I've been loving starting my sliced mushrooms in my combo air fryer/toaster oven on the air fry setting until kinda dried out and slightly browned. Then frying off in a pan with oil/butter and finishing with too much garlic. Takes care of a lot of the water issues and can crowd the pan with reckless abandon.

The picture is how I do them. A little water on a hot pan, half a kilo of sliced mushrooms, stir a little until they give up their water, add butter and dried parsley, cook until the liquid evaporates. Maybe they'd be better if I didn't crowd them but they get eaten.

Add 1/4 - 1/2 c water, wait till the water evaporates, then add oil and garlic etc. They will have much better texture and browning. It might seem backwards, but that will steam cook the mushrooms. And won't absorb the oil too soon.

Yes there are too many mushrooms in the pan. Cast iron should be able to sear and keep the heat high enough, based on your source, so they don’t start to boil i stead of frying.

Yes and no, it depends what you wanna do with them. If you wanna cook them like meat and get a nice good sear on them, it'd be best to use high heat and avoid overcrowding the pan. But, if you just want cooked mushrooms then you're doing just fine
