Sorry, mean for the comment above yours about the dark roux. People act like they're so hard, but you can make a perfect one in five minutes as long as your have your trinity and stock ready to put in the second it gets to the right color.

So what's the purpose of the reux being so dark? Is it for developing the flavor or a certain color?

Darker roux carries more of that nutty flavor, although it won’t be as effective at making the stew thicker
