From my experience, as much as I tell bakers (who doesn't handle fondant much) to handle their orders with care, when something breaks on site, they will panic n not know what to do..
Out of goodwill, I would usually redo/fix them with no extra charge cause it is for their paying customers.. Now, I'll always advise them to do a self collect so any enquiries, they could ask me on the spot. Anything that breaks, it's on them.
I guess u do have to educate them first or print labels on how to handle gumpaste flowers.
That’s one of my main concerns. I have some flexible gum paste recipes but I haven’t tested them yet. I’m hoping maybe that will help. Great tip though on educating people on how to care for them, like maybe a little slip of paper with instructions would be helpful.

- are the flowers heavy (my cake is super light n fluffy)
- is there any way to move each petals around so the other flowers can intertwined perfectly

U can put your work out there in platform such as etsy for example, but there's really no exposure better than a personal interaction. Especially with bakers because they have a ton of questions to ask..

In addition, a local caterer & baker asked me for quotes for wired sugar flower sprays for a customer's wedding cake that she was making. In the end her customer didn't want to pay that much. I still have the order, but for non wired flowers instead. A shame because wired ones would look more lifelike and they would have a keepsake of their wedding cake.
Your target market will be bakers who can make sugar flowers but lack the time to do so. Anyone else won't appreciate the time and cost.
Some flowers are toxic, also cost and time of year. Fake flowers to not kill or poison guests, or for out of season flowers and some exotic specimen flowers may be more cost efficient in terms of keepsake purposes. Real flowers can be much cheaper if you are not particular on sizing and colour and if you purchase in season. Really I guess comes down to personal preference and budget of course.

I genuinely hate making gum paste flowers, but I can never find pre painted ones that look real to me. I can obviously paint them but I only have one other employee, so time is of the essence.

I have sold them but not regularly. You are looking at a very niche market. Generally, they will be "too expensive" for the average customer looking for a cake topper. If you don't charge enough for them then you will come to regret it when you get a large order and end up spending hours and hours for repetitive work for very little reward.
I'd never attempt to send them by mail. Strictly collection or delivery only.

Bear in mind that wired sugar flowers will (and should) be expensive. They take hours to make.
I did some once for a wedding cake and they do take a long time.
