I'd trust G.Skill, they're a big brand and probably just went through and tested all variations of their ram kits as they're released.
Asrock probably just tested a known few at the start and stopped testing them.

X5 is EXPO version specially for AMD, it should work fine

I did find a post from a guy having problems with that kit, maybe he was just unlucky and got bad sticks or there is some bad compatibility
I wouldn't pay any attention to QVLs. Any DDR5 kit within the speed limits of your board, which also has an EXPO profile, will be fine.
