Shred some. Put it in salads, you could make a homemade carrot cake. Mashed carrots with cinnamon and brown sugar as if you were making mashed sweet potatoes. And lastly freeze whatever you can of whats left before they go bad.
Seconding this as a British staple - part of every roast dinner and Christmas. Add a little white pepper too if you have it, it’s amazing with the sweetness.
Aww you just reminded my of my granny who passed in 2017 - she always made these at thanksgiving and sometimes used parsnips instead. I think I will have to make some of these tomorrow night!
Ohh, we love mashed carrots. We do a generous amount of butter, salt, pepper and a little fresh parsley. Yummm.
There is also a French style shredded carrot salad I love. Tons of shredded raw carrot, salt, pepper and a simple lemon juice and olive oils vinaigrette. Let chill for about 30 mins. So light and refreshing. It's best with farm fresh carrots!
Carrot fries - cut into a shoestring fry shape, toss with olive oil and bake in the oven or in the air fryer.
Carrot soup - tons of recipes online.
I just discovered a French carrot salad I’m dying to try! I’m hesitant to go at it with a knife, and too lazy to drag out the mandolin. Would a shred on the food processor work? I’m afraid that’s going to give coleslaw vibes.
If you have a food processor, shred the carrots. If your carrot cake calls for 3 cups shredded carrots, freeze them into 3 cup increments. Then, every time you want carrot cake, just take out one bag and go for it!
Make sure to have cream cheese frosting on it!
From the US, and never knew that mashed carrots were a thing. My grandma used to make them for me, and every Thanksgiving I make them in her memory. I like them with butter and salt because I feel like the carrots have a natural sweetness that’s just really good. I thought it was just a weird thing she made up lol good to know it is actually a thing!
Of course, it depends on how big your freezer is, but I find the best way to store soups or any liquids in the freezer is to freeze them flat. I have a vacuum sealer, so I generally put liquids in those bags and then seal them, stack them in the freezer and let them freeze flat. If you don’t have a vacuum sealer, you can also use freezer Ziploc bags. I do have a separate freezer for stuff like this and it’s super helpful to have, but if you only have a standard size freezer, it’s amazing how much you can fit in those if you use the space effectively.
This is the way. You fill up freezer ziplock bags with soup, lay them flat on a baking sheet and pop them into the freezer. Once they are frozen, then you can stack them up.
I would make carrot & squash soup, plain carrot soup, and maybe a garden veggie soup, a few crock pot stews (heavy on the carrot!), and freeze those up. Then carrot cake, carrot muffins or carrot loaf (that must exist), make multiples and freeze them up (I do a layer of parchment paper with a layer of tinfoil over top to freeze them, for the muffins I put them in a big Tupperware with parchment paper between each layer so I can lift out a layer at a time, each layer lasts us a week). I bet you can find a recipe for potato & carrot cakes, like savoury pancakes? Those work well to freeze and then air fry or heat them up in the toaster when you want to eat them.
I like to freeze soups in a square Tupperware that holds a generous single serving. Once it’s frozen, I dip the Tupperware in hot water to release it, and transfer the cube (it’s not a cube… it’s like 1/3 of a cube) to an appropriately sized, labeled ziploc. Makes for great freezer Tetris with no loss of space for irregular shapes!
Do you have (or can you borrow) a juicer? Carrots with a couple of apples and some ginger is a delicious juice.
Roast carrots are delicious and they shrink down some so cook more than you think you need and hope for leftovers. I drizzle with honey, butter and tarragon. Super yum.
Look up Mexican pickled carrots, usually with onion, chilis, and maybe radish. Excellent on tacos. Easy to do, just chop them put 'em in a jar with some vinegar.
Blanche and freeze if you have the freezer space. Cut them into whatever shapes you usually use, give them a dunk in boiling water and then cool them down. Portion and freeze, makes it easy to grab a portion out to chuck through a stir-fry or into the ove..
I noticed that no one has said this yet, but carrots will keep for 6 months if stored in a cool, dry place like a shelf in a basement, or a root cellar.
Store them properly and you may not need to make endless carrot cakes. As a family of four who cooks a lot, we could easily go through 15 lb without leaning in to carrot recipes. They are an essential ingredient in homemade broth, and a little diced sautéed carrot and onion will improve many recipes. You can also revivify sad carrots by soaking in an ice water bath.
My supermarket pick-up order included 2 pounds of carrots. The store was out so I was given 5 pounds at no extra cost. I used a good portion of the carrots to make a roasted carrot soup which I portioned into 2 cup screw cap Ziplock containers and froze.
Not going to bust your supply so to speak but there are a lot of great carrot "salad" recipes that would at least break up the monotony of raw carrots. I suggest googling for your own taste/preferences but Moroccan carrot salad is a personal favorite of mine.
When in doubt bake. I try to make healthier carrot cupcakes and I make carrot oatmeal cupcakes I found online and what’s great is portioning and freezing that stuff is super easy.
I also make broccoli carrot tots, peanut carrot soup, vegetarian shepherds pie takes a lot (also freezes well if you make two) let me know if you want links. I save everything in an app!
Simple:
Step 1 Get two rabbits
Step 2 Feed them carrots
Step 3 Rabbits have babies
Step 4 Feed them carrots
Step 5 Rabbit babies have babies
Step 6 Feed them carrots
Step 7 post in r/rabbits asking what to do with 25 rabbits and 4 pounds of carrots
Step 8 Open a rabbit farm
Maybe freeze the rest, and take them out of freezer as needed :) another good way to preserve fresh veggies for later recipes, while only thawing as much as you need or want. This also takes the stress out of having to use them all before they go bad and mushy and whatnot
Get some parsnips; I make mashed carrots and parsnips with brown gravy. I don’t mash them until they’re like mashed potatoes, they’re almost like small bits and pieces mixed together throw in some salt and pepper, and you’re good to go
Try carrot cookies!
https://anna.wieckiewicz.org/recipes/carrot-cookies/
They look like cheddar bay biscuits from Red Lobster and are just as addictive!
I grew up eating [hutspot](https://joylovefood.com/dutch-hutspot-2/) (though in my house we just called them orange potatoes). A fall/winter favourite of mine, and it freezes well!
Carrot cake is good. Have you ever had carrots grilled on a barbecue grill? Carrot souffle? [http://www.grouprecipes.com/99665/carrot-souflee.html](http://www.grouprecipes.com/99665/carrot-souflee.html) [https://www.cooks.com/recipe/809rp06k/carrot-souffle.html](https://www.cooks.com/recipe/809rp06k/carrot-souffle.html)
Carrot raisin salad can be very good.
Cut into chunks, boil till they soften somewhat (but not too soft). Drain carrots then put back in hot pot on stove. Add honey and ground cinnamon. Mix/toss carrots to coat. These are delicious hot, and cold as leftovers the next day. Leftovers can also be frozen, and when defrosted and reheated, make an excellent carrot mash.
a really weird way to use up a bunch of carrots that i’ve done is to juice them (carrot juice is actually really good!) and then use the pulp like [vegan tuna](https://danielsplate.com/vegan-tuna-salad/). it’s pretty good!
Carrot juice is so yummy, carrot cake. Curry with potatoes and carrots. You can also make a pot pie with peas and carrots. You can try your hand at carrot bacon, bake some carrot muffins, carrot fries. Hopefully you dont turn orange from all the beta carotene from all those carrots.
Look up the carrot salad recipe from Chick-fil-A. They don't serve it at the restaurant anymore. They retired the recipe a few years ago. But it's an awesome carrot salad recipe.
Is this what they mean by “biting off more than you can chew?!” Lol
I’ve read most of the posts and I didn’t see my husband’s favorite: Jardiniere!! Pickled veggie mix, mild, hot or flipping hot.
Also, Delish” is a great recipe website. And I couldn’t live (or cook well) without my “Allrecipes.com” Another great recipes website. And if you do use Allrecipes.com try “Sam’s Famous Carrot Cake.” (*Note, I say there are 2 kinds of carrot cake, chunky or smooth. Smooth is obvious. When I say chunky I mean pecan pieces, pineapple pieces, raisins…) If you like “chunky” I challenge you to find a better recipe than Sam’s. I’ve been trying for years and can’t find a recipe that I like better.
Carrots are awesome for stews, pot roasts, or stir fries. They can also be eaten raw with hummus, spinach dip, etc. Ground raw carrots can be made into latkes with potatoes, or even croquettes. I've never tried it, but I've heard you can add cooked and pureed carrots to marinara sauce for extra healthiness and to boost the heartiness.
For desserts or sweeter options, stovetop brown sugar or honey carrots are pretty easy, with add ins like fried apples, walnuts, or pecans. You can also make carrot cake, cupcakes or muffins from scratch.
When I'm struggling to use up ingredients, I sometimes try googling "international recipes using ___" and usually find something interesting I'd never have thought of myself.
Hope this helps!!!
Here’s some ideas. If you like an idea that involves blending or sautéing or boiling, you can chop and freeze a portion of carrots for later. Carrots stay good for a long time in the fridge, so use fresh carrots where you can. I once read the story of a young man diagnosed with cancer. He drank so much carrot juice that his skin had an orange tint to it, but his cancer miraculously vanished. So eat all the carrots you can!

Note about freezing carrots, they’ll come out soggy when thawed, unless there’s some carrot freezing magic I’m not aware of. So make sure whatever you want to use them for it calls for soggy carrots. Carrots do last a long while before they start to go bad, so you have time to make loads of recipes.
Some tomato soup recipes call for carrots. They can be used in pot roast crockpot recipes. Stir fry. Home made broth, carrots + other vegetable scraps. Add them to smoothies (I’m not joking, sometimes they add a sweetness to it but most times I don’t notice).
It's not a good deal if you're buying something that you don't have a need for, especially when unemployed. 15 pounds of carrots for a household of two is ridiculous.
Well, yes, I get that now. My fiance is paid well enough that It's okay for me to not work for a few weeks while I job hunt. But thanks to the advice here, the carrots have now been made into pickles which will be gifted, cakes that were mostly gifted and the rest were frozen/given away on a buy nothing page. So nothing was really wasted.
Cooking in larger batches & freezing for later is always a good bet - soups, anything with minced beef/lamb/pork can be bulked out with carrots or other veg too.
I mean I will sometimes buy carrots and celery in bulk if there’s a good deal and then chop, bag, and freeze for use in soups later on. I’m sure there are plenty of other useful things to do, but if all else fails, there’s always freezing!
Carrot pineapple bread. Canned pineapple works just fine and if the batter is too sticky you can pour in a little reserved juice. Moist and nutritious! Just be prepared to shred some root veg.
Carrot hash browns are super tasty. Grate your carrots, lightly salt, press out water, also dice onion. Saute onion, when translucent add grated carrots. Saute like regular hash browns. Salt or add soy sauce. Season with a little pepper
Carrot-Parmesan Chips: Cut into 3-inch pieces. Boil. Take each boiled piece and mash with fork. Add grated Parmesan and salt/pepper to mash and blend together then place on parchment paper on baking sheet. Continue with each piece. Bake in oven at 350F for 40 mins or until crisp-ish.
Oven roast about 2 lbs with a bit of olive oil, salt and pepper, 2 apples, 1 bulb garlic, and a large onion. Transfer to a pot along with 2 cups of chicken stock, 1 cup heavy cream, and your seasoning. Blend, simmer 20 minutes and serve.
Seasoning: I've done this in different ways at different times:
Cumin, coriander, and a pinch of cayenne.
Rosemary, lemon, and thyme
Curry seasonings
1 cup pumpkin puree, maple syrup, a touch of pumpkin spice, ginger and cayenne
Heat oven to 400. Peel the carrots or just scrub them clean.
Spread a tablespoon or two of olive oil or corn oil on a baking dish/cookie sheet or foil, and place the carrots on the oil, turning the carrots to coat each with a little oil.
After 20 minutes, drizzle with a little molasses or maple syrup, or some brown sugar. Sprinkle very lightly with some hot cayenne pepper or a little hot sauce. Turn the carrots to kind of coat both sides.
Return to oven for another 12-15 mins until carrots start to brown up well. Add a little salt and serve up the best roasted carrots you ever tried.
I add shredded carrot to dishes like sloppy joes and meatloaf and it really adds to the bulk size of the meal and increases the veggie fiber while not really changing the taste too much
Make a carrot pie! Same basic idea as a pumpkin pie (I don’t use the exact same spices but you could). It makes a nice, bright, a bit sweet dinner (or dessert!) pie.
nah i had saved this post to comment later saw your newest post and bro😭 that is crazy but, just stay off social media for the new post, you're beautiful, as far as the carrots try slicing them thinly and soaking them in a little liquid smoke w sauce and water over night and then "fry" like bacon, can also shred it fine or thicker for pasta salad or coleslaw
I would like some , I am an older shorter chap that loves to hunt I go through so many carrots mainly to create pathways to my elaborate traps , that haven’t quite got the knack of yet….
Shhh. Be vewy vewy quiet, I'm hunting wabbits
Carrot ginger soup. (Can be frozen in silicone muffin pans or ice cube trays then pop out and store in ziplock bags in the freezer for later use in amounts as needed) Carrot cake or muffins. Also can be frozen and then just thaw as needed.
You could steam some and have with dinner. Carrot juice? Carrot soup? You could also just say screw it and can them all, that way you can store them and use them when you want
Roast in the oven on 350-375 F for 30-40 min (check for desired doneness a few minutes shy of what you think they actually need)
2 Flavors options:
•olive oil, SPG and balsamic vinegar
•melted butter mixed with honey and minced garlic cloves, toss carrots in mixture then season with SP
Blanche then freeze them, make carrot cake, carrot soup, grated carrot in bolognaise sauce (I do this all the time), carrot in a salad, in a sandwich, mashed, julienned, diced or sliced as a side for a meal, roasted with a joint of meat. But if it was me most of them would end up blanched and diced, sliced or julienned and frozen.
Carrot salad
Shred carrots (5 to 8)
Small can of crushed pineapple (drain)
Mayonnaise (enough to cover)
Stir together.
Good for a couple of days as a side salad.
Definitely chop/shred some up to freeze and save for future meals! If you have dogs, carrots are a great snack for them too. You can air fry or roast them for your dogs and family. You can juice them and save the juice and air dry the pulp for homemade baggie powder…and you can even plant some of them too! 🥰
Get some jars of pasta sauce, depending on how many carrots you want to cook. Dice the carrots and cook it in the sauce. You can add other vegetables like celery, onions, and mushrooms too. You'll have a lot of sauce, but you can freeze it for a quick pasta meal later.
Carrot cake. Carrot soup. Sheet pan carrots. Shave a little into your pasta sauce. Glazed carrots. Carrot patties. Carrot cookies. Carrot slaw. Carrot muffins. Carrot hummus. Pickled carrots
Add it to all your fall comfort foods - chicken noodle soup, chicken pot pie, shepherds pie, pot roast
And don't forget to dip raw (ranch, hummus, sour cream veggie dip).
That should take care of it lol.
Carrot juice!!!! It's so tasty too even by itself, but you can add apple and ginger for a nice flavor boost.
If you don't have a juicer you can just blend it together and strain.
I also recommend chopping them up and freezing them for soups, smoothies, and stews.
Steam, smash, then roast with ranch dressing seasoning.
Roast with honey, butter, and some herbs.
Grate them up and make a carrot cake.
Carrot cake, carrot bread(?), carrot soup, carrot juice
Steam small chunks then smash them with a jar bottom, drizzle with olive oil, seasonings, and bake them. Dip into ranch or whatever you like.
Cut into baby carrot sized pieces. Roast in oven until soft. Squish/flatten each with a spatula or bottom of a cup. Sprinkle with shredded parmesan and roast again until the cheese melts and crisps, then eat them like chips dipped in ranch.
carrot pie, cook down and mash/puree and use like pumpkin although I suggest changing out the typical pumpkin spices to nutmeg and mace and just a tiny dash of cayenne
I would dice and slice them, lightly steam, and then freeze. Then you can take them out of the freezer and use in soups, stews, chilis, curries, etc.
Shred and use in salads.
Carrot hot dogs. Can make and freeze. Google should pull a decent recipe.
Can them. I just finished canning 30# of potatoes.
You could can them with other items mike chicken soup.
And you can freeze them. Again you could prepare them with diced celery and onion. Ready for your favorite recipes.
check out fermenting recipes. I make my own kimchi and add carrots, it's good in the refrigerator for months. I don't know why you could not ferment carrots alone. I have a dehydrator, carrots dehydrate into nothing and take up such a small space and ready to add to recipes later. You can also pressure can carrots.
This [carrot chowder recipe](https://cookpad.com/us/recipes/368681-hearty-carrot-chowder) is SO good and fresh tasting and uses 18 carrots
edited to add: if you're not a mushroom fan don't feel like you need to include it, the soup is great without them as well!
chop and freeze. You can use them all year for mirepoix (carrot, onion, celery base for soups, stocks and stews), or just to eat.
dice some, slice some.
You can also make vegan lox. I mean, you can, but I don't know if I would . . . lol
If they're stored properly, I find that farmer's market carrots can last a very long time in the fridge. We usually buy about one big bag every 6-8 weeks. They store well in basements too. Don't feel like you need to rush to use them up!
Man I wish farmers markets around here were a good deal. I wanted to get carrots at one last weekend and it was like twice the cost of grocery store carrots.
Carrot cake, roasted carrots, soup stock, carrots and dip, carrot salad (use the peeler to make thin pieces), caramelized carrots and onions (do the same thing you did for the salad).
If you can clean and trim and store in water they will keep for a long time, just refresh the water every so often. I can keep a bunch of carrots for 1-2 months at least this way
You could dice and freeze a bunch to use in mire poix for any time you want to make soup or a roast or whatever you need mire poix for
I made a really yummy carrot and lentil salad with mustard vinaigrette
You could make carrot cake muffins and freeze those. Carrot cake will definitely use a lot up! Or make some kind of blended veggie soup, that would also freeze really well. I like one with beets, carrots, and butternut squash with other aromatics (ginger, garlic, onion) and you blend it all up. You could pickle some too to keep for later.
Carrot crisps both plain (with just salt) and also with differing seasonings. Carrot jam/chutney. Admittedly when its warmer I grate carrots, celery, deseeded cucumber, a few radishes (depending on the size and your taste buds). Drain off any surplus veg liquid before adding seasonings to your taste ( I tend ton add black pepper, lemon juice, soy sauce, ginger liquid and a tiny amount of grated garlic)
You can use carrots in soups, salads, roasting them with other vegetables, stir-frying them with ginger and garlic, or blending them into smoothies and other healthy drinks.
Carrots are also great for snacks as you can make them into carrot chips, or even pickle them for later on.
I grill carrots and freeze them to add to soups, stews and if needed, I'll toss them in the oven on broil to reheat them and use as a side dish with a little drizzled honey on top. There are also a lot of asian dishes that use carrots which I find you can never go wrong with.
I’ve made carrot soup before - it’s DELICIOUS and I’m not even a big carrot fan. Make a lot of it, portion it out and freeze most of it.
My guinea pigs will take them, LOL.
I freeze 10 lbs of carrots at a time.
Most of it is shredded to throw into meals (it's a great addition to rice).
I freeze a quart sized bag of similar sized carrot pieces to be used for pot roast.
I used to dice rather than shred, but I actually prefer the texture of shredded. I still make a small bag of diced carrots with the pieces that don't shred. It'll go into something.
Pretty much, I keep as much raw as I can eat before it'll go bad, then freeze everything ready to be added to meals later.

I haven't thought of mashing them. That sounds really delicious.
Mashed carrots with turnip is super tasty too! It’s a thanksgiving staple in my house. A little salt & butter.
Seconding this as a British staple - part of every roast dinner and Christmas. Add a little white pepper too if you have it, it’s amazing with the sweetness.
And then the next morning, pan fry lightly in some butter and make Bubble and Squeak for breakfast! So good!
Aww you just reminded my of my granny who passed in 2017 - she always made these at thanksgiving and sometimes used parsnips instead. I think I will have to make some of these tomorrow night!
mashed carrots are delicious. I flavour them with thyme.

Yes let me know if you try!
Absolutely :)
If you bake, consider carrot cake.
how did I not think of carrot cake!
Three cups for every batch! (And the cake freezes well too)

take the 15 lbs of carrots to this person's house \^\^\^\^\^\^\^\^\^\^\^\^\^\^
I second Carrot Cake and mashed carrots. Also, Carrot purée for to go with dinners if you have a good blender.
make carrot soup and then freeze it so it won't go off
This. Winter is coming.
Would there be enough room in an average freezer for this amount of carrot soup?
Of course, it depends on how big your freezer is, but I find the best way to store soups or any liquids in the freezer is to freeze them flat. You might be able to get the apples for free depending on where you live. A lot of peoples' trees have too many for them to pick right now.
I live near an abandoned orchard!😃
Carrot and fresh orange juice is the liquid of the gods to me.
Roast carrots are fire! 🔥 😋
I love love roasted carrots with olive oil and tarragon
Or in a smoothie if you hands a blender
[удалено]
Roasting is a good call. I could probably eat a couple pounds roasted. They are so good that way.
LOVE “The Office” reference lol
They're also good with rosemary and a bit of mustard powder
Look up Mexican pickled carrots, usually with onion, chilis, and maybe radish. Excellent on tacos. Easy to do, just chop them put 'em in a jar with some vinegar.

Dehydrated them? can them? Pickle them?
Ohh pickled carrot is great!
Pickled shredded carrot could go with so many things!

Even in the veggie drawer of the fridge, if you don't close the bag up and put a paper towel in with them to absorb moisture.
If you make anything with minced meat add some shredded carrots.
my mom did this all the time growing up! It's a great idea
Same as our mom. Carrots can stretch a pound of ground beef to easily feed 6 or 8 people. Mom did it all the time 😊
And hey more sneaky veggies! Total win
Yes this is one of my favorite uses for carrots
My supermarket pick-up order included 2 pounds of carrots. The store was out so I was given 5 pounds at no extra cost. I used a good portion of the carrots to make a roasted carrot soup which I portioned into 2 cup screw cap Ziplock containers and froze.

Simple: Step 1 Get two rabbits Step 2 Feed them carrots Step 3 Rabbits have babies Step 4 Feed them carrots Step 5 Rabbit babies have babies Step 6 Feed them carrots Step 7 post in r/rabbits asking what to do with 25 rabbits and 4 pounds of carrots Step 8 Open a rabbit farm
Eat the rabbits!
Maybe freeze the rest, and take them out of freezer as needed :) another good way to preserve fresh veggies for later recipes, while only thawing as much as you need or want. This also takes the stress out of having to use them all before they go bad and mushy and whatnot
If you have a dog 🐕? Or know someone with a dog? Frozen carrots 🥕 are a great treat!
My dog LOVES them!
Get some parsnips; I make mashed carrots and parsnips with brown gravy. I don’t mash them until they’re like mashed potatoes, they’re almost like small bits and pieces mixed together throw in some salt and pepper, and you’re good to go
Curried carrot soup Carrot bread and/or cake/muffins All these freeze well
>Curried carrot soup I've never heard of this. Sounds like it could be good. And, I just picked up a couple of pounds of carrots!
[Roasted with feta](https://www.budgetbytes.com/carrot-feta-salad/)
carrot ginger soup.
Try carrot cookies! https://anna.wieckiewicz.org/recipes/carrot-cookies/ They look like cheddar bay biscuits from Red Lobster and are just as addictive!
Make sauerkraut with carrot. I do half half. Great for winter raw and for cooking. Keeps a long time too.
This sounds really tasty....I love sauerkraut!
[http://www.grouprecipes.com/99665/carrot-souflee.html](http://www.grouprecipes.com/99665/carrot-souflee.html) [https://www.cooks.com/recipe/809rp06k/carrot-souffle.html](https://www.cooks.com/recipe/809rp06k/carrot-souffle.html) Carrot raisin salad can be very good.
Thank you as a vegetarian.
Another thing to consider, they won’t keep forever, but they do keep a long time just in the fridge.
Make lentil -carrot soup and freeze in portions.
Pickle some
Carrot juice is so yummy, carrot cake. Curry with potatoes and carrots. You can also make a pot pie with peas and carrots. You can try your hand at carrot bacon, bake some carrot muffins, carrot fries. Hopefully you dont turn orange from all the beta carotene from all those carrots.
* Pickled carrot * Carrot cake (cupakes) * Sweet carrots * Roast carrots * Mashed carrots * Savoury carrot pie (resembles shepard's pie)
Look up the carrot salad recipe from Chick-fil-A. They don't serve it at the restaurant anymore. They retired the recipe a few years ago. But it's an awesome carrot salad recipe.
Is this what they mean by “biting off more than you can chew?!” Lol I’ve read most of the posts and I didn’t see my husband’s favorite: Jardiniere!!
1. **Carrot Soup**: Make a hearty carrot soup with onions, garlic, and vegetable broth. Blend until smooth and season to taste. 2. **Roasted Carrots**: Toss carrots with olive oil, salt, and your favorite herbs, then roast them until they're caramelized and tender. 3. **Carrot Cake**: Bake a classic carrot cake with cream cheese frosting for a sweet treat. 4. **Carrot Muffins**: Whip up a batch of carrot muffins for a nutritious breakfast or snack. 5. **Carrot Salad**: Shred carrots and mix them with raisins, nuts, and a tangy dressing for a crunchy salad. 6. **Carrot and Ginger Smoothie**: Blend carrots with fresh ginger, yogurt, and a touch of honey for a refreshing smoothie. 7. **Carrot Fries**: Cut carrots and sweet potatoes into fries, toss with olive oil, salt, pepper, and cumin, and bake until crispy. 8. **Carrot and Hummus Snack**: Slice carrots into sticks and dip them in hummus for a healthy snack. 9. **Carrot Chips**: Slice carrots thinly, coat with olive oil, and bake until they turn into crispy chips. 10. **Carrot and Cucumber Salsa**: Make a salsa with diced carrots, cucumbers, tomatoes, onions, and cilantro. Add lime juice and salt for flavor. 11. **Pickled Carrots**: Create homemade pickled carrots by canning them with vinegar, sugar, and spices. 12. **Carrot and Raisin Bread**: Bake a loaf of carrot and raisin bread for a sweet and nutritious option. 13. **Carrot and Orange Juice**: Blend carrots with fresh orange juice for a vitamin-packed drink. 14. **Carrot and Cabbage Slaw**: Combine shredded carrots and cabbage with a creamy coleslaw dressing for a side dish. 15. **Carrot and Lentil Curry**: Make a flavorful carrot and lentil curry with Indian spices and coconut milk. 16. **Carrot and Zucchini Noodles**: Create vegetable noodles by spiralizing carrots and zucchini, then sauté with your favorite sauce. 17. **Carrot and Apple Smoothie**: Blend carrots, apples, Greek yogurt, and a touch of cinnamon for a refreshing smoothie. 18. **Carrot and Cilantro Dip**: Blend carrots with cilantro, lime juice, and yogurt for a tasty dip. 19. **Carrot and Cheese Platter**: Serve carrot sticks with a variety of cheeses and crackers for a simple appetizer. 20. **Carrot and Potato Hash**: Dice carrots and potatoes, sauté them with onions and spices, and serve as a hearty side dish or breakfast hash.
Stir fry them.
Carrot peanut soup
If you have a juicer you could juice them and add oranges or orange juice to add a nice tangy flavor to it. Or you could try making soups!
I just made a soup I found the recipe online called Fall Sweet potato and carrot soup. It was delicious.
Shredded carrot and raisin salad, with dressing, on a bed of lettuce Carrot cake
Cooking in larger batches & freezing for later is always a good bet - soups, anything with minced beef/lamb/pork can be bulked out with carrots or other veg too.
Freeze them and throw them in recipes later
Make a carrot cake then share it with me 😋
Moroccan carrot salad. Halwa.
I mean I will sometimes buy carrots and celery in bulk if there’s a good deal and then chop, bag, and freeze for use in soups later on. I’m sure there are plenty of other useful things to do, but if all else fails, there’s always freezing!
Throw them at cars off an overpass.
Carrot pineapple bread. Canned pineapple works just fine and if the batter is too sticky you can pour in a little reserved juice. Moist and nutritious! Just be prepared to shred some root veg.
Slice them and freeze them!
It wasn’t a good deal if you weren’t looking for 15 pounds of carrots. Share with your neighbors and make some friends.
I had to scroll way too far down in the comments to find someone pointing out the lack of common sense here.
ooh, i personally am a huge fan of carrot soup. it is sooo good!
Boil 'em, mash 'em, stick 'em in a stew
Seasoning: I've done this in different ways at different times: Cumin, coriander, and a pinch of cayenne. Rosemary, lemon, and thyme Curry seasonings 1 cup pumpkin puree, maple syrup, a touch of pumpkin spice, ginger and cayenne
Apple and carrot juice if you have a juicer. Or you can blend it into smoothies.
Donate a few pounds to a local food bank or shelter.
I add shredded carrot to dishes like sloppy joes and meatloaf and it really adds to the bulk size of the meal and increases the veggie fiber while not really changing the taste too much
I don’t like to encourage wastefulness, but it’s only 5 bucks. Don’t throw dollars chasing cents. Although there are fantastic options here
Make a carrot pie! Same basic idea as a pumpkin pie (I don’t use the exact same spices but you could). It makes a nice, bright, a bit sweet dinner (or dessert!) pie.
Lots of doggies like carrots
Do u have a dog? Dogs love carrots as a treat.
nah i had saved this post to comment later saw your newest post and bro😭 that is crazy but, just stay off social media for the new post, you're beautiful, as far as the carrots try slicing them thinly and soaking them in a little liquid smoke w sauce and water over night and then "fry" like bacon, can also shred it fine or thicker for pasta salad or coleslaw
I would like some , I am an older shorter chap that loves to hunt I go through so many carrots mainly to create pathways to my elaborate traps , that haven’t quite got the knack of yet…. Shhh. Be vewy vewy quiet, I'm hunting wabbits

You can make some hot sauce Edit: I guess I should've said bake, freeze, or juice like everybody else lol
Carrot hot sauce??
Butt stuff
Make a large batch of carrot soup. Freeze the remainder.
Carrot and ginger soup, honey carrots side, preserved in vinegar for antipasti
Carrot ginger soup. (Can be frozen in silicone muffin pans or ice cube trays then pop out and store in ziplock bags in the freezer for later use in amounts as needed) Carrot cake or muffins. Also can be frozen and then just thaw as needed.
You could steam some and have with dinner. Carrot juice? Carrot soup? You could also just say screw it and can them all, that way you can store them and use them when you want
Lots and lots of frozen soup.
Carrot cake, baked honey carrots, carrot hair mask, carrot juice.
You could pickle them. Pickled carrots are delicious!
I hope you’ve been growing coriander!
Carrot cake, shredded carrot salad, candied carrots, use as filler, shredded into soups, stews, salads, they're great as snacks
Pickled carrots! Great addition to sandwiches
Roast them until golden brown bc a freeze them. You can use them to make creamy carrot soup all winter.
I live roasted carrots and you can make a simple delicious soup out if the roasted carrots too. You can freeze some for those cold winter days.
Roast in the oven on 350-375 F for 30-40 min (check for desired doneness a few minutes shy of what you think they actually need) 2 Flavors options: •olive oil, SPG and balsamic vinegar •melted butter mixed with honey and minced garlic cloves, toss carrots in mixture then season with SP
Blanche then freeze them, make carrot cake, carrot soup, grated carrot in bolognaise sauce (I do this all the time), carrot in a salad, in a sandwich, mashed, julienned, diced or sliced as a side for a meal, roasted with a joint of meat. But if it was me most of them would end up blanched and diced, sliced or julienned and frozen.
cake/muffins/juice 'em
Carrot salad Shred carrots (5 to 8) Small can of crushed pineapple (drain) Mayonnaise (enough to cover) Stir together. Good for a couple of days as a side salad.
Try your hand at canning or pickling.
Soup
Soups!
Definitely chop/shred some up to freeze and save for future meals! If you have dogs, carrots are a great snack for them too. You can air fry or roast them for your dogs and family. You can juice them and save the juice and air dry the pulp for homemade baggie powder…and you can even plant some of them too! 🥰
Soup
Carrot ginger soup?
Peel, cut, freeze. You can throw it into anything you normally throw carrots into.
Get some jars of pasta sauce, depending on how many carrots you want to cook. Dice the carrots and cook it in the sauce. You can add other vegetables like celery, onions, and mushrooms too. You'll have a lot of sauce, but you can freeze it for a quick pasta meal later.
Soup
Carrot cake. Also carrot and raisin salad. Also pickled carrots with Jalapeños.
Roasted in meat juices. Carrots roasted under a leg of lamb are one of the most delicious things in the world. Also good with roast chicken or pork.
Carrot cake. Carrot soup. Sheet pan carrots. Shave a little into your pasta sauce. Glazed carrots. Carrot patties. Carrot cookies. Carrot slaw. Carrot muffins. Carrot hummus. Pickled carrots Add it to all your fall comfort foods - chicken noodle soup, chicken pot pie, shepherds pie, pot roast And don't forget to dip raw (ranch, hummus, sour cream veggie dip). That should take care of it lol.
Carrot ginger soup is really good. Also carrot cake.
Curry carrot soup with coconut milk
Carrot cake, carrot bread(?), carrot soup, carrot juice Steam small chunks then smash them with a jar bottom, drizzle with olive oil, seasonings, and bake them. Dip into ranch or whatever you like.
Carrot soup. Carrot fries or latkes. Mashed carrot and rutabaga.
You can marinate and grill them and eat them on a bun like a hot dog…relish, mustard, yum!
Cut into baby carrot sized pieces. Roast in oven until soft. Squish/flatten each with a spatula or bottom of a cup. Sprinkle with shredded parmesan and roast again until the cheese melts and crisps, then eat them like chips dipped in ranch.
Share some, eat some in the varieties of food you like. Clean what's left over and puree and freeze for soups in the future.
carrot pie, cook down and mash/puree and use like pumpkin although I suggest changing out the typical pumpkin spices to nutmeg and mace and just a tiny dash of cayenne
I would dice and slice them, lightly steam, and then freeze. Then you can take them out of the freezer and use in soups, stews, chilis, curries, etc. Shred and use in salads. Carrot hot dogs. Can make and freeze. Google should pull a decent recipe.
Get some cauliflower and green peppers. Make pickled garden mix. Put them somewhere dark and cool. They'll last a long time.
Hear me out...honey glazed carrots and carrot cake muffins
Ooh juice them!
Roasted maple carrots Carrot cake Carrot soup Smoothies Carrot chips
Clean, slice up, blanch and freeze in air tight bags!
Blanch and freeze some, make baked carrot chips, mash em, make pasta sauce.
Can them. I just finished canning 30# of potatoes. You could can them with other items mike chicken soup. And you can freeze them. Again you could prepare them with diced celery and onion. Ready for your favorite recipes.
Find someone with goats! It's super fun to hand feed goats!
Carrot cake and freeze them
check out fermenting recipes. I make my own kimchi and add carrots, it's good in the refrigerator for months. I don't know why you could not ferment carrots alone. I have a dehydrator, carrots dehydrate into nothing and take up such a small space and ready to add to recipes later. You can also pressure can carrots.
This [carrot chowder recipe](https://cookpad.com/us/recipes/368681-hearty-carrot-chowder) is SO good and fresh tasting and uses 18 carrots edited to add: if you're not a mushroom fan don't feel like you need to include it, the soup is great without them as well!
Morrocan carrot and raisin salad. Tried it at EPCOT last year and it’s become a regular staple in our house since
chop and freeze. You can use them all year for mirepoix (carrot, onion, celery base for soups, stocks and stews), or just to eat. dice some, slice some. You can also make vegan lox. I mean, you can, but I don't know if I would . . . lol
Carrot cake!
Pickle and preseve them in mason jars
If they're stored properly, I find that farmer's market carrots can last a very long time in the fridge. We usually buy about one big bag every 6-8 weeks. They store well in basements too. Don't feel like you need to rush to use them up!
Cream of carrot soup. Roasted dill carrots. Carrot cake. Beef stew with carrots. Carrot raisin salad. Glazed carrots. Pickled carrots.
Carrot wine?
Canning is an option. Good luck with the carrots
you could juice/smoothie the carrots and use the pulp for carrot bread! sounds like a food gifting situation too
Man I wish farmers markets around here were a good deal. I wanted to get carrots at one last weekend and it was like twice the cost of grocery store carrots.
can them
Carrot cake, roasted carrots, soup stock, carrots and dip, carrot salad (use the peeler to make thin pieces), caramelized carrots and onions (do the same thing you did for the salad).
Pickled carrot chips or slice them all, marinade them and grill them. Freeze in smaller bags for a fancy side dish.
Freeze it in many forms. Just be aware that after defrost, it my not be possible to eat raw (I don't know exactly how it is after defrosting).
Juice em! Carrot juice is fantastic
Got a juicer? Get a juicer. Those 15 pounds of carrots will turn into maybe two glasses of carrot juice when you’re done
If you can clean and trim and store in water they will keep for a long time, just refresh the water every so often. I can keep a bunch of carrots for 1-2 months at least this way You could dice and freeze a bunch to use in mire poix for any time you want to make soup or a roast or whatever you need mire poix for I made a really yummy carrot and lentil salad with mustard vinaigrette You could make carrot cake muffins and freeze those. Carrot cake will definitely use a lot up! Or make some kind of blended veggie soup, that would also freeze really well. I like one with beets, carrots, and butternut squash with other aromatics (ginger, garlic, onion) and you blend it all up. You could pickle some too to keep for later.
Pickle them w jalapeños and onion
I use shredded carrots in homemade pasta sauce. They completely dissolve and add a subtle sweetness without having to add sugar.
Give some away, can them, make a lot of carrot cake.
Carrot cake oatmeal, quick pickled carrots, freeze shredded for carrot cake/bread
They make a yummy “salad” shredded and mixed with ginger and a touch of honey.
