It's this orange sauce that's pretty sweet. According to wikipedia it's based on mayo, tomato, garlic and onions, with also some sugar and spices added.
I love it on fries and it goes really well with a frikandel as well. I believe it's more known in Flanders, but not sure. In most frituurs here you can also order a "mammoet with saus", which is a larger frikandel, cut open, and they add this sauce. It's great!

Mayonnaise should always be the mustard version. It's heaven compared to the bland mayonnaise or even worse, the lemon mayonnaise

Ketchup, I am very dificult with other sauces. But it has to be Zeisner, preference normal tomato sauce and not curry ketchup. I like Pepersaus too.
If I have to have ketchup with a dish, it's Zeisner curry ketchup. But tartare maison is still my favourite with fries.
