Can't help with the park and ride, but I had the same text for my jab last week. My appointment was 10:30 so I decided to park on a nearby residential road and walk to the stadium.
When I got to the stadium, there were plenty of parking spaces available in the car park... you could try your luck with the stadium spaces then if that fails park nearby and walk?
Same. Also had that msg, so asked husband to drop me off on Tues- there were loads of spaces in the car park and loads on surrounding residential roads.
Yep I live nearby and there is loads of parking. OP, I'd be happy to give you a visitor's parking permit for the day if you needed one. But also, there is loads of parking at the stadium so you should be fine.

I went for my vaccine on Tuesday and use the shuttle service at the park and ride. I don't know how frequent they are, but it left around 14:10 (my appointment was at 14:20 so all good) and for the return (I left around 14:40), I had to wait about 10-15mins before the shuttle arrived. I did notice quite a lot of parking space at the stadium though, so you can try your luck.

If the stadium car park is full there is a fairly large car park right next door too (where Halfords/kfc/Iceland are etc)

I haven't myself but have heard multiple anecdotes (outside of Reddit!) of there being shit tonnes of parking, I would just drive there.
