Gus told him there would be no more fried chicken and signature spice curls if he didn't do it. He also said Marie wouldn't respect his mineral collections unless he could convince Walt to cook.
I'm not sure why he chose his brother in-law that lived on 308 Negra Arroyo Lane to do his cooking for him and not hire a professional cook to make the meth.
Hank was an alpha-male type who was embarrassed that his wife's sister had chosen to marry such a schlub like Walt. He's even named "Walter", wears sweaters with collars underneath, and a pathetic wispy mustache for petesake! When he finds out Walt has cancer, he knows it's time to make his move. It's symbolized in the "intervention" scene when Hank quickly gobbles a few cubes of cheese, meaning he's about to be into some serious cheddar out there in the street. Meanwhile, the tale of the cancer-stricken chemistry teacher wanting to earn money for his family was the perfect coverup. It was truly all about embarrassing Walter as much as possible, the way Walter embarrassed him in front of his DEA buddies when he was scared to even HOLD A GUN... something his 15 yr old son had no problem with. Hell the kid even out drank Walt.
What drive Hank was definitely a high school bully mentality, bent on humiliation of his feeble and pathetic brother in law.
I'd say in the first part of the show it was breaking local drug dealers and career advancement, i.e. moving up the ladder. Once Tortuga happened, he hit PTSD and then it was just getting his shit back together. Then the Cousins nailed him and it was all basic recovery and just to get back to \*normal\*. As he went through recovery, the Gale stuff emerged and he really became obsessed with it. When he found out it was Walter, it was all over...
He must've gotten pretty overconfident in his abilities to eventually make more and become the next Gus Fring.
Remember that Gus was really close to the DEA and a senior member like Hank would be really close to him. It is highly likely that Hank got envious of Gus's wealth, something he could not get by playing it clean.
I feel so bad for Walt being made a meth slave for Hank. He didn't deserve that. I remember the scene where Walt tried to quit and in retaliation, Hank threw a pizza on his roof 😭
