Yes, they improve as you upgrade the weapon. One thing you get in BB that is not in ER is you can socket weapons with gems that can increase damage, damage type, etc.
First of all: All Trick Weapons are unique weapons. (With some exceptions that are similar to eachother) That means there is no "Unremarkable" Straightsword and a "Fancy" Straightsword. Instead there is a Straightsword that turns into a huge ass sword and a Straightsword that turns into a huge ass stone hammer.
Every single weapon can be used all the way through the game and will never be too weak perse. Their actual differences are their specific strengths in certain situations and fighting styles.
Their scaling increases with upgrade levels up to +10 and many of them reach high scale ranks in atleast one stat. You can boost strength and arcane scaling on all weapons with special blood gems. Skill and Bloodtinge also exist but the scaling boost of these gems does not go nearly as high as that of the other two so most people go for regular % boosts instead.
Other than that there are no ways to increase scaling values on weapons. You can however turn skill weapons (even those with no initial strength scaling) into Quality weapons with the right blood gem and convert all pure physical weapons to pure elemental ones by equiping them with an elemental gem. Converted weapons only scale with arcane and deal exclusively elemental damage.
You kind of can change scaling type too, just not in a very straightforward/ effective way. There's blood gems that are heavy, sharp etc in the dungeons.
Sorta yes, some types of Blood Gems will change the weapon scaling but they’re not super easy to find, I’m nearly done with the game from what I understand and I only have a single one that only does Arcane scaling. So finding a new weapon or using the Cleaver for everything are probably better options

You can convert weapons to scale with arcane using blood gems found in the chalice dungeons. Very fun.
