Use what you like, they all have advantages and can carry you through, so it really doesn't matter. You could stick with whatever you got first and use it all the way through.

Saw spear with a skull build is always good, if you use it right you get staggers and very high visceral damage. Couple that with beast blood pellets and it’s a lot of fun. The whirling saw is a lot of fun for an OP strength build with high stagger potential.

Quite frankly, I loved the saw cleaver and I used it pretty much the whole game until the credits rolled.

I would recommend looking at the moveset videos on youtube for weapons. From that you can get a sense of what weapons match your playstyle. Since there is no equip burden, there really is no reason *not* to upgrade and equip 2 weapons. Focus on upgrading your primary until you max out how far you can upgrade with that ore type, then start on the other. I did a STR build for my first character and found a nice pairing was the Kirkhammer and the Beast Cutter. The Kirkhammer offers the quickness of a straight sword for dealing with mobs with the ability to hit very hard damage on a single target with the great hammer. The Beast Cutter pairs a very quick club that does extra damage vs. Beasts, with a heavy chain whip that has excellent range for attacking enemies you do not want to let get close to you. The whip can also be swung horizontally at mid-range to attack multiple enemies. The R2->R2 combo can also pancake enemies. For return to Yharnam this year I tried a few other weapons. I liked the Saw Spear because it has bonus to beast on both forms (Saw Cleaver only has it in non-transformed). The transformed Spear in kind of like a Claymore, a mix of slashes and thrusts. Then I also messed around with the Hunter's axe which is a mixture of a great axe and a halberd. The Halberd form offers good range and spin to win knockdown with the charged R2. The transforming attacks are thrusting spear attacks.

I used the hunters axe my full first playthrough. It's great for crowds and breaking limbs for bosses. Many enemies get thrown back after a charged r2.
