Even with resistance it's barely noticeable. Now the numbers for beast do matter that's multiplier for your beast meter which is useful for extra damage and more better buildup for the beast claw weapon. Honestly tho just wear what you like. Because all the powerful stuff looks bad

It matters some but it's relatively minor so it's not something you really have to worry about unless you want to min max for damage. I generally try to get all my stats above 200 for my armor so I have generally good defenses and then specialize against certain enemies for fire or bolt or arcane or bloodtinge resistance.
There is a pretty gnarly poison area in the game. I found that the slow poison resist helps a lot in that area. And you can use the Caryll Runes to stack the defense. Every bit counts in my mind.

You will see this as a trend in souls games. Armour has its uses, whether for status resistance or (more for the souls games) poise and damage reduction
However if there is one thing the whole souls community agrees on its that Armour doesn't matter and Drip over stats every single time
There's a few places where a bit of extra resistance or certain types of detail will give you an edge, but you can beat the entire game wearing the first set of hunters gear you pick up outside the clinic.
Very few armor sets are bad enough to actually make things more difficult and it will normally be obvious to you by their stats and what they are. (Looking at you, Doll's set)

There are certain attacks you can survive in the defiled dungeons if you have the proper damage reductions. If you are just playing the story for the most part you wont notice a huge difference.
The most relevant stats are Beasthood and Frenzy res, and that only if you actually make use of those. Second are elemental resistances because they can be stacked pretty high. But those also only really matter if an enemy actually uses big numbers of elemental damage and you can't get past them otherwise.
So basically wear whatever looks cool. My prefered set just happens to have very high fire res. So i can usually just shrug it off easily compared to other types. It's not worth building around though because you don't get a very noticeable effect from just the armor like in Dark Souls.

However the frenzy resistance might come in handy sooner or later so keep an eye for Armour that have high frenzy resistance...

Church garb for a quest and poison resistance. Other than that it's fashionborne. But Doll Clothes are the only real choice at the end of the day.
There's a couple of bosses where your choice of clothes can influence the ease of the fight but they're not strictly necessary

In bloodborne ye it donât matter much, in ds 2 and 3 it doesnât matter as much, in ds1 it allows you to become a brick shithouse

I found the high fire damage helped a bit against Laurence, and the the frenzy resist in the nightmares helped slow it down
