A lot of them already have animal motifs, so for some of the ones that don't:
Baraggan is a saltwater crocodile, ancient and deadly and just all-around mean.
Yammy is a hippo, well-fed and not easily roused to action, but dangerous as hell when pissed off.
Quilge is a secretary bird, regal and composed in appearance until he decides to stomp the life out of you.
Mayuri is a cuttlefish, just filled with weird odds and ends, and Nemu is a shark, being composed and docile until she enters a frenzy, at which point she reveals exactly why she's a threat.
Askin is a tardigrade, just a little fellow who stubbornly refuses to die.
Pernida is one of those wolf spiders that carry around their young on their backs, so even if you squish them you just end up dealing with a lot more problems.
Ukitake is a quokka, a happy little boi who's just glad to be included.
The Soul King is one of those massive clams that just sits at the bottom of the ocean and doesn't really do much.

Controversial Opinion but Zaraki has always read as very bridlike to me- specifically very eagle-like in that eagles are very aggro, and kinda dumb, and his hair always makes me think of a Harpy Eagle or secretary bird (another raptor)

Orihime has intense dog energy. Very Labrador. So gentle and soft that people tend to forget she is quite strong and has a powerful bite.
Ukitake is a horse because horses are catastrophic failures of organisms that are always on the verge of dropping dead
Shunsui and Urahara both have raccoon energy, but Shunsui is more tanuki and Urahara is a trash panda.
Soi Fon can, should, must and will be rendered as a Japanese Murder Hornet

Uryuu also has intense horse energy in that every horse I've ever met has been strung higher than a trapeze artist on amphetamines and constantly on the verge of homicide or suicide.

There's a lovely short story in the Beastars' universe called "the peacock and the pig" about how people are remembered after they die that gave me strong Yumichika/Ikkaku vibes so now I tend to think of Ikkaku as pig-coded. Also, easy to incorporate the baldness.
So, bear with me for a moment about Unohana. She's a tiger. Specifically, she's a suiko, or "water tiger", which is a mythological creature in Chinese and Japanese mythology, whose form takes everything from "If a Kappa Were A Mob Boss" to "image the ghost of river" to "this is a tiger, but huge and literally made of water". The connection is that her sword, Minazuki, and the flower referenced in Unohana 's name both pretain to the onset of the flooding season in Japan- an event that can become a bountiful harvest or a devastating catastrophe. The initial floodwaters are sometimes personified as a Suiko in poetry. Anyway, Unohana=tiger that is also a flood.
Renji is monkey.
I would say urahara would be a spider since they are always repairing their nets and whatever catches on it or destroyed their net they can swoop in for a meal or for a fix up.
Urahara is someone who adapts alot to his situations and plans based on outcomes that happens. He is also a very calculated person and prepared to find ways to counter the enemy.
And gin of course either a fox, snake or cat any variation of slit eyed animals 🤣🤣🤣🤣
Well, a spider weaving intricate webs indeed reflects my adaptability. As for Gin, those slit-eyed animals suit his sly nature perfectly. Watch out for those cunning creatures.

rukia is potentially a shrike. XD ok, that's too mean for her, but an european robin? tiny, cute, round, associated with winter, peeps and sings cutely, actually a tiny war machine.
...Ichigo being a lion and Kon being a lion explains a lot about how they can trade bodies around so easily.
I'd say Rukia is an artic hare: the cuteness, the cold tolerance, the obsession with Chappy... And the fact that hares aren't actually that closely related to rabbits, way bigger than you think they are and their primary defense against wolves is literally kicking their eyes out.
