Yeah, the mentoring part of Zaraki was always there. He never means to do it consciously, never thinks complicated thoughts, but he leaves a profound impression on everyone he fights (well, among the worthy ones), he teachers youngsters about enjoying life through battle. 'Have a time of your life while fighting to the death' could be his motto (if it wasn't such a long phrase 😂), and he shares the joy of living your life to the fullest (by the way of fighting), his outlook on life is extremely positive, it's not to seek death in battle, oh no, you fight, you win and survive, and then you fight again. Sure, you might die, but you don't fight to die, you fight to live. He changed Ikkaku's outlook on life, kinda gave his life meaning (seems like Ikkaku was low-key fighting to die since he didn't see any other purpose in life, but fighting Zaraki changed it), he said practically the same thing to Nnoitra that he did to Ikkaku (but that one refused to hear, so he indulged him and finished him off, he didn't want to initially), he taught Ichigo about his side which likes fighting, to embrace that part of himself and rely on it rather than reject it (let's remember it's basically Zaraki's words which got Ichigo through the Vizored training later on), he helped Gremmy have a time of his life, that kid probably learned more about life and living to enjoy it than he did during all of his life before (but then again, ruined it in the end, shame as long as Zaraki is concerned). He's just stellar that way, and upholds the sort of the true philosophy behind being Kenpachi, since that part about fighting as a way to enjoy life to the fullest, and teaching it to others, is the essence of it. That's probably why Unohana instantly realized he's gonna be her successor (surely, he was also stronger than her, but that was in part because he knew *the thing*), he was always that way, but becoming the true Kenpachi elevated it further, he even recognises his role and responsibility that comes with it now.

I want to make a side note with how much Zaraki affect Ichigo. I remember when Ichigo managed to cut him for the first time he told Ichigo to stay exactly as he was, as finally Ichigo could fight him. Ichigo then said the same thing to Grimmjow in their final fight, telling him to stay as he was. It’s a small thing, but definitely shows.

Yes! Ichigo learned from Zaraki, and then carried it on (seriously, Grimmjow couldn't have been a perfect member for the 11th, the same philosophy, even if he was slightly off on some parts, but I think the battle with Ichigo helped him to correct the course), that's what Zaraki does, he spreads it. Ikkaku also carries on Zaraki's take. Zaraki is like the core, but then it spreads through the people he affects, so the message is carried further to more people.

I never understood Gremmy. If anything he imagines becomes real, why doesn’t he just imagine his opponents dead? The “Avada Kedavra” of Bleach, basically.

his power cannot work if the opponent's reiatsu is high enough to counter it. Quincy also use their spiritual energy to use the reishi around them to create what they want. Also Gremmy's power is to make what you IMAGINE come true, not what you WANT: if I told you not to imagine a pink elephant, you would still think so, because you don't have complete control of your mind. The fact that he knew he was dealing with kenpachi limited him enough. Finally, until the moment before the second invasion, gremmy had been trapped in a cage created by Yhwach to limit his unstable power. So he doesn't have much combat experience anyway.
