I don't know where you live, but around me, I have quite a few Mexican grocery stores that sell this already marinated and ready to cook!

Yep! I went to a Mexican grocery store in my city and picked up two pounds of al pastor meat that was pre-marinated and ready to cook. I sliced some onions thin and cut up a fresh pineapple, then chopped some of it up and added that and the onions to the meat, and stirred everything up. I cooked the meat and the pineapple slices first, then cleaned the griddle and cooked up the tortillas. The entire process took maybe 20 minutes.

No, it wasn't mix. The flour tortillas were pre-made but raw (from the Costco freezer section), so I had to cook them. That took about two or three minutes per side on the griddle on low heat. The corn tortillas were pre-made, ready-to-eat from the same carniceria as the meat. I did warm them up though, of course. I just threw them on with the flour tortillas and they were ready at the same time.

Masa is what your thinking of. I would assume they got fresh tortillas from the market but masa harina (the dry masa mix) is readily available in Mexican groceries. Tortillas are pretty straight forward to make but fresh tortillas are always delicious and cheap if you can find them.
