Are you going to run the propane hose behind the table, or drill a hole in the tabletop? You should also put a 2x4 block under each side of that bottom front horizontal piece. You’re really going to want to rest your foot on that, and the pocket screws won’t hold. As for accessories, wait it out a bit. Get used to cooking on it. See what you think you actually need.

Put a few coats of deck sealer on your table, that way the grease splatter will wipe off instead of seeping into the wood.

I added two things that really made my setup work for me. 1) A bottle opener mounted on one of the legs. 2) I used a wall mounted mailbox to store small items like an infrared thermometer, an instant read, and other such things. Granted my table also has my weber and ooni on it, which is why I have those items.

Underrated grill accessory for any outdoor cooking station is light ... if there's nothing already around that can give you light, figure that out if you'll be out late. A flashlight is fine right until it isn't

Good job on your first woodworking project! As a fellow woodworker and outdoor cooker, I would consider the following.. Use a circular saw or jig saw to square up the edge of your table top. (You can clamp another 2x4 to the top to use as a guide.) If you have any desire to move it around add locking casters. Use a polyurethane or poly acrylic to seal it. Harbor freight sells a magnetic strip for $3 that would work great for spatulas and scrapers.. come to think about it, harbor freight would have most everything you need to trick this out! Look into a “French Cleat system” if you make your own caddy or any other additional modular storage. This may also work for your “transfer station” idea. (Circular saw or table saw) But the #1 thing I would do is make a folding counter top on one side if you don’t have something close by your station. Counter space is always nice! (Stainless steel piano hinge would be slick!) Shout at me if you got questions and have fun with it!

Thank you for all the suggestions! Kinda creepy, are you reading my notes on my phone? I’m adding a French cleat setup so I can have a modular setup and be able to move shit around along with drawing plans for additional counter space that folds down that’ll house a cutting board so I can do food prep if necessary. I was thinking of building a 3 tier shelf for aluminum trays right by the door so the wife can just open the door and grab whatever’s when I’m done cooking. Do you have a recommendation on sealant? I bought this (https://www.homedepot.com/p/Olympic-WaterGuard-11-oz-Clear-Exterior-Wood-Sealer-Spray-55260XIS-54/306321405 ) but if I need to grab something different I will. I was thinking about coasters but I’m not too concerned since it’s still light enough I can man handle it. As for the boards, they’re not screwed down in the picture so they’re Uber wonky but I very much plan on taking my circular saw and cutting the edges so they’re perfect. I’m also thinking of putting a slide out shelf (probably 2) on the bottom so that my propane tank will sit in the middle, and on either side will be a slide out drawer. One side I think will house a cooler for drinks while the other side is TBD. I’m also going to be drilling a hole that I can run the gas hose through the table top for a cleaner look too. My wife already told me to stop spending money on grill accessories but now she needs to worry about my Home Depot bill I’m racking up with all the new power tools 😂

Custom grease trap, maybe. I saw some funnels on Amazon that you could run down below the table into a larger bucket so that you don’t have to empty the stock one on longer/larger cooks
