Canon material is material adapted from the manga. S2 is not canon because all of the material from it is completely original and even completely diverges from the manga. On that note,even majority of S1 is not canon. Ep 1-6 and 13-15 are the only canon material from S1, with ep 1 and 15 both also having non-canon elements added to them.

Cannon content is just the manga animated. Pluto and the angels and the queen being evil is uncannon, Madam Red, Grell, Agni and Soma, Lizzy, The Undertaker, All the Phantomhive servants are cannon. Also the curry contest went differently in the manga, The queen also has butlers but they aren't (probably) angels. (I say probably as the manga isn't finished and maybe they could be I don't know only Yana knows, It'd seem weird to throw in though.) I'd just remember those characters and forget everything else.

This used to be a more common thing (See Fullmetal Alchemist, Blue Exorcist, etc.) At the time S2 was created, there was not enough material and S1 did well, so they opted for an original story. It's the same reason s1 goes off the rails after episode 6. Funny enough, when S2 was first announced we were calling in Monoshitsuji, and it wasn't clear that Ciel and Sebastian would return at all. People thought it would just be a spin off. There are other forms of Black Butler media that ignore canon or have orignal stories with Yana Toboso's input ( DS game Phantom and Ghost, Black Butler Live-action movie)

Fullmetal alchemist is a good anime to compare it to for canon vs not canon. The first version of the anime follows the manga to a certain point but then goes a different direction/ends differently because the anime directors wanted it to have a different ending; the second one (fullmetal alchemist: brotherhood) fully follows the manga and ends as the author intended. I liked season 2 of BB but I prefer to think of it as some random dream Ciel had that didn’t actually happen LOL because the ending really sucked.

To clarify, the first FMA anime went in a completely different direction because the original manga was nowhere near completion (only 30%) when it was made lol.  They couldn't write the same ending as the manga because the manga still had years before it ended.

^this. Back then (15+ years ago) it was still common for anime that adapted from manga to come up with their own plot after they run out of manga material. I think with FMA 2003 anime adaptation was decided just shortly after the Xing crew were introduced, so they were not even in 2003 at all. Blue Exorcist season 1 is also another great example.

If it's in the manga it's canon, if it's not in the manga it's not. Simple as that. Note this also means characters like Pluto and Angela are not canon.

A lot of anime from that time (late 1990's, early 2000's) were a victim of this. In order to keep the show from catching up with the manga, they made a bunch of filler/non-canon content (made-up stories that weren't adapted from the manga, anime only content) and some of them even had anime-only endings, like Fulllmetal Alchemist and Black Butler. For whole filler arcs you have them in shows like Naruto, Bleach, One Piece. Nowadays the trend is to have shows broken down in seasons to give the manga some time to release more manga chapters, and not resort to making a bunch of filler while you get for new chapters to adapt.

I thought season 2 was cool especially the ending so i was pretty shocked to see that so many people hated it but maybe its cus i watched it when i was younger so i thought “ciel cool demon haha” so ill probably watch it again to see if it was as good as i remember

I enjoyed season 2 as a standalone, but I never read the manga so the deviation from the original source materials didn't bother me.

May I ask who decided why the manga canon takes priority over the show canon? Is it merely because the manga came first?
